Email has a wonderful and rich set of conventions, this is very true.
However, most 'non-IT-types' aren't likely to understand these conventions.
Especially since a large number of them use Outlook, which has, for its
entire existence, ignored the usual email conventions at every chance (e.g.
quoting text).

But ... I think your point still stands.  If you can make entering text on a
website similar and as simple as typing an email, most people will get it.
