 I am looking for a recipe for a really moist white or yellow cake from 
scratch. I want to make this for someone's birthday. I also would like a recipe 
for white icing. I make scratch cakes from time to time but some of them aren't 
as moist as cake mix cakes. Does anyone else have that problem with making 
scratch cakes? If so, let me know what you do to help them stay moist. Thanks

chocolate mix. It was a dry mix and you mixed with hot water just like the

I am looking for a special recipe. Back in the seventies, on the box of a 
Duncan Hines yellow cake mix, was a recipe for a cake that the box said was 
like eating pudding in a bowl. I actually made this cake, and it was wonderful. 
It was very moist and pudding like, so that you had to eat it out of a dessert 
dish. Does anybody know what I am talking about? I would love to have the

I have not tried this recipe.  It is a large recipe so you might want to cut 
it down.



MOIST YELLOW CAKE
Ingredients
.   1 cup butter
.   2 1/2 cups white sugar
.   3 eggs
.   1 1/2 teaspoons vanilla extract
.   2 1/2 cups buttermilk
.   3 3/4 cups all-purpose flour
.   2 1/4 teaspoons baking powder
.   2 1/2 teaspoons baking soda
Directions
1.	Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9x13 
inch pans. Sift together the flour, baking powder and baking soda. Set 
aside.
2.	In a large bowl, cream together the butter and sugar until light and 
fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in 
the flour mixture alternately with the buttermilk, mixing just until 
incorporated. Pour batter into prepared pans.
3.	Bake in the preheated oven for 35 to 40 minutes, or until a toothpick 
inserted into the center of the cake comes out clean. Allow to cool.

scratch. I want to make this for someone's birthday. I also would like a 
recipe for white icing. I make scratch cakes from time to time but some of 
them aren't as moist as cake mix cakes. Does anyone else have that problem 
with making scratch cakes? If so, let me know what you do to help them

Sweet Potato Gratin with Chipotles
2 1/2 cups heavy cream
1 tablespoon chipotle puree
3 medium sweet potatoes, peeled and sliced thin
Salt and freshly ground pepper
Preheat oven to 350 degrees. Combine the heavy cream and chipotle
puree in a small bowl. In an 8 by 8-inch baking dish, arrange a fourth
of the sweet potatoes. Season to taste with salt and pepper and pour a
fourth of the cream over it. Repeat with the remaining potatoes and
cream, forming 4 layers. Bake for 1 hour or until the cream has been
absorbed and the potatoes are browned. Remove from the oven and let
sit 10 minutes before serving

EASY BEEF - TACO CASSEROLE

1 lb. ground beef
1 medium onion, diced
1 (15 1/2 oz.) can kidney beans
1 (8 oz.) can tomato sauce
2 tsp. chili powder
1/2 tsp. garlic salt
4 oz. cheese, grated
1 c. broken tortilla chips

Cook ground beef and onion in skillet; drain. Stir in kidney beans with 
liquid, tomato sauce, and spices. Heat to boiling. Put half this mixture 
into 1
1/2 quart casserole. Top with layer of broken tortilla chips. Pour remaining 
meat mixture on top. Sprinkle with cheese. Cover and bake in 350 degree oven
for 25-30 minutes. Garnish around edges with more chips to serve. Serves 6 
people.  Enjoy.

Easy Award-Winning 15 Minute Spaghetti Sauce
Categories: Sauces, Pasta
 Yield: 4 Servings

   1/2Diced green pepper
   1/2Diced onion
 2cloves garlic, mashed
 2Large tomatoes, chopped
 1 c  Tomato Sauce
   1/2 c  Red or white wine (or stock)
   1/2 c  Cream or milk
  Your favorite spices
  -oregano, basil, etc.
  Salt & pepper

Heat olive oil in large skillet till water sizzles. Add green pepper, onion,
garlic, and tomatoes.
After they sauté for about 5 minutes, add one cup tomato sauce, wine and
cream. Flavor with a sprinkle of oregano, basil, salt and pepper.

Turn down heat and simmer about 5 minutes.

Serve over pasta. -

Quick and Dirty Meat Sauce

1 pound ground beef
1/2 cup chopped onion
2 cloves garlic, minced
1 tsp dried basil
1 tsp dried oregano
1/4 cup dried parsley
1/2 tsp salt
1/4 tsp pepper
28-ounce can pureed tomatoes
15-ounce can tomato sauce
1/4 cup white or red wine
Parmesan cheese, grated, for topping

Brown the ground beef with the onion and garlic in a large saucepan, then 
drain any excess fat. Remember not to dump it down your sink! I always keep 
a couple of cleaned cans (from easy stuff to clean like tomato sauce) under 
my sink and pour any fat into there.


Add the basil, oregano, parsley, salt and pepper and stir in, cooking for 
another minute or so.


Add the tomato puree, tomato sauce, and wine. Stir in and bring to a simmer. 
Simmer uncovered for 15 minutes or longer. If it simmers a long time, it 
might get a bit thick. Add some liquid (more wine or just water) to thin it 
out a bit but I do think it tastes better if it simmers longer.


If you're having company and want to make the sauce ahead of time and let it 
simmer longer while you visit with friends, just leave it on very low heat 
and check it now and then. Add more liquid or cover it after 10 minutes or 
so, then uncover it when you put the pasta in the water. This can also be 
made a few days ahead and kept in the refrigerator and made a few weeks or 
months ahead and frozen.


Serve over your favorite pasta and top with some grated Parmesan cheese.

64 1-inch pieces

Ingredients:

24 Walnetto candies, unwrapped
1/4 cup semisweet chocolate chip morsels
1 cup sweetened coconut flakes, divided
Cooking spray

Directions:

1) Line a 8 by 8-inch square microwave safe dish with plastic wrap allowing 
the wrap to come over the sides. Spray the prepared dish with cooking spray.


2) Spray a medium size, microwave safe bowl with cooking spray. To the 
prepared bowl, add the Walnettos, chocolate morsels and 1/2 cup of the 
coconut.


3) Stir to combine and microwave on High for 1 minute 30 seconds. Stop the 
microwave, stir the mixture, return to microwave and cook 30 seconds longer.


4) Remove the mixture and stir.

5) Scrape it into the prepared pan. Flatten the mixture with a rubber 
spatula evenly. Cover the top of the candy with remaining coconut, using the 
rubber spatula to press it in slightly. If the mixture is too firm on top 
for the coconut to stick, place the mixture back in the microwave for 10 
seconds, then resume pressing the coconut into the candy.


6) Allow the candies to cool completely. Remove the entire block, using the 
plastic wrap to help you pull it out. Using a sharp knife, cut candy into 
small,1-inch squares.

Here is another one.  I can't find any where the biscuits are made from 
scratch.  They all call for Bisquick or a similar baking mix.

BEER BISCUITS



3 1/4 cups all purpose baking mix (Bisquick)

1 tbs finely chopped thyme leaves

1 tbs sugar

1 cup beer

1 egg, beaten



Heat oven to 450 degrees. In bowl, combine 3 cups baking mix, thyme 

and sugar. Stir in beer until soft dough forms. On surface sprinkled 

with remaining baking mix, knead dough 10 times. Roll out to 1/2" 

thickness. Using 3" biscuit cutter, cut 12 rounds, rerolling scraps 

as needed. Brush rounds with egg. Top each with a parsley leaf, if 

desired. Place on ungreased baking sheet. Bake 8 min. Serve with 


butter, if desired. MAKES 6 SERVINGS.*

Old-Time Louisiana Cream Fudge



3 cups granulated sugar

2 cups whipping cream

1 cup cornstarch

1/4 cup real butter

1/2 cup flour

2 cups whole pecans



Method



1. Cook sugar, whipping cream and cornstarch to the soft ball stage on

a candy thermometer.

2. Remove from heat and add butter; beat for 5 minutes.

3. Blend in flour and beat until creamy and thick.

4. Add whole pecans.

5. When thick, pour into a buttered 13 x 9-inch pan.

6. Cool and cut.

Here is one that is about as near as the one I made. except I like more 
chocolate taste and after adding the Nestle Quick  chocolate mix, I would 
sometimes add a couple of teaspoons of coco to it also.Katie


   Hot dry Chocolate Mix

Nice dry mix to have ready throughout the winter months.

1 lb. Nestles Quick
1 Lb. Powdered Sugar
1 lb. Coffee Mate
1 Box Dry Milk that makes 8 quarts
Hot Water
Mini marshmallows

Mix all dry ingredients; sometimes we would add the mini-marshmallows to dry 
mixture - but that's optional.


To make hot chocolate:

Fill cup or mug ? full with dry mixture; add hot water to fill remainder.
If you haven't added the mini-marshmallows to dry mixture; add them fresh.

Here is another recipe, Leigh.  It's my favorite:

Shortbread Cookies with Frosting

1 cup butter or margarine, melted
½ cup packed light brown sugar
2 cups flour
¼ teaspoon salt
¼ teaspoon baking powder

Frosting:
1/2 cup butter, softened or melted
2 cups powdered sugar, (approximately)
1 to 2 tablespoons milk
½ teaspoon vanilla
½ teaspoon almond extract

Cookies: Preheat oven to 350 degrees.  Cream butter and brown
sugar.  Stir in flour, salt and baking powder.  Pinch off pieces of
dough, about 2 inches in diameter, and pat into desired shapes.  Bake
for 15 minutes.  The cookies will feel firm.

   Frosting: Cream butter and powdered sugar.  Add enough milk to make
spreading consistency.  Add flavorings.  Frost cookies and let stand
until set.

 Note: You can make the topping thin, if you prefer icing;
however, the thicker frosting gives this cookie a nice texture.  The
combination of vanilla and almond extracts give the cookie its unique
flavor.  Goes well with tea or coffee.

I simply place the ball of dough in the center of the pan and flatten with
my hands, making sure that the dough is pulled into the corners and building
up the corners slightly.  Your fingers should leave enough of a pattern.
Don't worry, the cup of sugar in this recipe is quite enough!  This recipe
is wonderful with coffee and tea and even better with wine or champagne.
Have fun really getting your hands into this dough, work out all of your
frustrations and enjoy!

Beef in Red Wine Gravy

Ingredients
1-1/2  pounds beef stew meat, cut into 1-inch cubes 2  medium onions, cut 
up 2  beef bouillon cubes or 1 envelope (1/2 of 2-ounce package) onion  soup 
mix 3  tablespoons cornstarch Salt Ground black pepper 1-1/2  cups dry red 
wine

Hot cooked noodles (optional)

Directions
1. In a 3-1/2- or 4-quart slow cooker, combine beef stew meat and onions.
Add bouillon cubes or dry onion soup mix. Sprinkle cornstarch, salt, and 
pepper over beef and onions. Pour red wine over beef mixture in cooker.
2. Cover and cook on low-heat setting for 10 to 12 hours or on high-heat 
setting for 5 to 6 hours. If desired, serve over hot cooked noodles. Makes 
6 servings.
