I am looking for a recipe for a really moist white or yellow cake from scratch. I want to make this for someone's birthday. I also would like a recipe for white icing. I make scratch cakes from time to time but some of them aren't as moist as cake mix cakes. Does anyone else have that problem with making scratch cakes? Hi everyone, I am looking for a special recipe. Back in the seventies, on the box of a Duncan Hines yellow cake mix, was a recipe for a cake that the box said was like eating pudding in a bowl. I actually made this cake, and it was wonderful. It was very moist and pudding like, so that you had to eat it out of a dessert dish. Does anybody know what I am talking about? I have not tried this recipe. It is a large recipe so you might want to cut it down. MOIST YELLOW CAKE Ingredients . 1 cup butter . 2 1/2 cups white sugar . 3 eggs . 1 1/2 teaspoons vanilla extract . 2 1/2 cups buttermilk . 3 3/4 cups all-purpose flour . 2 1/4 teaspoons baking powder . 2 1/2 teaspoons baking soda Directions 1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9x13 inch pans. Sift together the flour, baking powder and baking soda. Set aside. 2. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the buttermilk, mixing just until incorporated. Pour batter into prepared pans. 3. Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool. Sweet Potato Gratin with Chipotles 2 1/2 cups heavy cream 1 tablespoon chipotle puree 3 medium sweet potatoes, peeled and sliced thin Salt and freshly ground pepper Preheat oven to 350 degrees. Combine the heavy cream and chipotle puree in a small bowl. In an 8 by 8-inch baking dish, arrange a fourth of the sweet potatoes. Season to taste with salt and pepper and pour a fourth of the cream over it. Repeat with the remaining potatoes and cream, forming 4 layers. EASY BEEF - TACO CASSEROLE 1 lb. ground beef 1 medium onion, diced 1 (15 1/2 oz.) can kidney beans 1 (8 oz.) can tomato sauce 2 tsp. chili powder 1/2 tsp. garlic salt 4 oz. cheese, grated 1 c. broken tortilla chips Cook ground beef and onion in skillet; drain. Stir in kidney beans with liquid, tomato sauce, and spices. Heat to boiling. Put half this mixture into 1 1/2 quart casserole. Top with layer of broken tortilla chips. Pour remaining meat mixture on top. Sprinkle with cheese. Cover and bake in 350 degree oven for 25-30 minutes. Garnish around edges with more chips to serve. Serves 6 people. Quick and Dirty Meat Sauce 1 pound ground beef 1/2 cup chopped onion 2 cloves garlic, minced 1 tsp dried basil 1 tsp dried oregano 1/4 cup dried parsley 1/2 tsp salt 1/4 tsp pepper 28-ounce can pureed tomatoes 15-ounce can tomato sauce 1/4 cup white or red wine Parmesan cheese, grated, for topping Brown the ground beef with the onion and garlic in a large saucepan, then drain any excess fat. Remember not to dump it down your sink! I always keep a couple of cleaned cans (from easy stuff to clean like tomato sauce) under my sink and pour any fat into there. Add the basil, oregano, parsley, salt and pepper and stir in, cooking for another minute or so. Add the tomato puree, tomato sauce, and wine. Stir in and bring to a simmer. Simmer uncovered for 15 minutes or longer. If it simmers a long time, it might get a bit thick. Add some liquid (more wine or just water) to thin it out a bit but I do think it tastes better if it simmers longer. If you're having company and want to make the sauce ahead of time and let it simmer longer while you visit with friends, just leave it on very low heat and check it now and then. Add more liquid or cover it after 10 minutes or so, then uncover it when you put the pasta in the water. This can also be made a few days ahead and kept in the refrigerator and made a few weeks or months ahead and frozen. Serve over your favorite pasta and top with some grated Parmesan cheese. Enjoy. Here is another one. I can't find any where the biscuits are made from scratch. They all call for Bisquick or a similar baking mix. BEER BISCUITS 3 c. Bisquick mix 1/4 c. sugar 1 c. beer Mix above ingredients and roll out as you would for regular biscuits. Also, bake in same manner. The yeast in the beer gives the biscuits the flavor of rolls. BEER BISCUITS 3 1/4 cups all purpose baking mix (Bisquick) 1 tbs finely chopped thyme leaves 1 tbs sugar 1 cup beer 1 egg, beaten Heat oven to 450 degrees. Here is another recipe, Leigh. It's my favorite: Shortbread Cookies with Frosting 1 cup butter or margarine, melted ½ cup packed light brown sugar 2 cups flour ¼ teaspoon salt ¼ teaspoon baking powder Frosting: 1/2 cup butter, softened or melted 2 cups powdered sugar, (approximately) 1 to 2 tablespoons milk ½ teaspoon vanilla ½ teaspoon almond extract Cookies: Preheat oven to 350 degrees. Cream butter and brown sugar. Stir in flour, salt and baking powder. Pinch off pieces of dough, about 2 inches in diameter, and pat into desired shapes. Bake for 15 minutes. The cookies will feel firm. Frosting: Cream butter and powdered sugar. Add enough milk to make spreading consistency. Add flavorings. Frost cookies and let stand until set. Note: You can make the topping thin, if you prefer icing; however, the thicker frosting gives this cookie a nice texture. The combination of vanilla and almond extracts give the cookie its unique flavor. Goes well with tea or coffee. I simply place the ball of dough in the center of the pan and flatten with my hands, making sure that the dough is pulled into the corners and building up the corners slightly. Your fingers should leave enough of a pattern. Don't worry, the cup of sugar in this recipe is quite enough! This recipe is wonderful with coffee and tea and even better with wine or champagne.
