I can do that. One of the two values must be primary in that it will
be the value of $quilt_mode and appear in messages. So if you say
--baredebian+git
you will get messages which say you specified "-quilt=baredebian".

Please take a look at wip.baredebian in my chiark repo and see what
you think of the way the docs read now.
If after reading that you still think it ought to be renamed, I will
