Hi Alex, what LibreOffice version are you using? what is your OS language and
what are the linguistic settings under Tools  Options  Languages Setting 
Language? Do you have those patterns D/M/Y;D/M;D.M.Y;D-M-Y in the Date
acceptance patterns field?

Version: 4.3.3.2
Build ID: 430m0(Build:2)

OS is Linux Ubuntu 14.10

The info for languages is in the Language.jpg file. 
The info for date format at cell level is in the DateFormat.jpg file. 

I think I understand my mistake because I didn't set the language French in the
options. 
The thing is I may use and French and English and mix them up in documents. And
it seems that LibreOffice doesn't allow to specify specific language for some
cells, only for the entire spreadsheet though. If I specify some language in
the cell format windows it seems it doesn't remember my choice. Am I clear in
my description/analysis ?

you should be careful here with Calc because it impacts not only the display
but calculations too.

Yes. However, and I didn't test it with your settings, you should add the
following formats to the Date acceptance patterns field: D/M/Y;D/M;D.M.Y;D-M-Y,
that should allow you to handle French date formats and may be enough.
