Chocolate and Orange Mousse
(serves 4)

INGREDIENTS
2  Table Spoons Boiling Water
3  Tea Spoons Powdered Gelatine
2  Table Spoons Cocoa powder, sifted
1  Orange, Juiced and Rind Grated
3/4  Cup low fat plain Yoghurt
200g  Light French Vanilla Fruche
1/3  Cup SPLENDA
2  Egg Whites

STEPS
1. Place the boiling water in a small bowl and sprinkle with the Gelatine. 
Stir until the Gelatine fully dissolves 
 
2. Whisk together Cocoa powder, Orange Juice and Rind. 
Combine with Yoghurt, Fruche and SPLENDA. 
Stir in Gelatine mixture 
 
3. Whisk Egg Whites until soft peaks form and fold into mousse mixture. 
Spoon into a serving dish or individual bowls and place in fridge for 
3 hours or until set

Chicken Noodle Casserole
 
1 can Cream Chicken Soup
1/2 cup milk
1/8 tsp. pepper
1/3 cup grated parmesan cheese
2 cups cubed cooked chicken/turkey
3 cups cooked medium egg noodles
chopped parsley for garnish
 
In large saucepan mix soup, milk, pepper, cheese, chicken and noodles.
Over medium heat, heat through, stirring occasionally. Garnish with parsley.
Serves 4

Budget Steak
Servings: 6

3 pound round steak, cut 2 inches thick
tenderizing salt
1 cup water
1/4 cup soy Sauce
1/4 cup firmly packed brown sugar
1/4 cup lemon juice
1 tablespoon Worcestershire sauce
1 tablespoon minced parsley
1/4 teaspoon hot pepper sauce
 
Sprinkle meat generously with tenderizing salt. Combine remaining
ingredients in a shallow bowl. Add meat and marinate in refrigerator
overnight. Place steak on grill rack. Grill 12 to 15 minutes, basting
occasionally. Turn, continue basting, and grill 10 to 15 minutes
longer for medium done steak.
TIP: Grill 10 minutes per side for rare; 20 to 25 minutes per side for
well done.

Chicken in a Packet

4 boneless skinless chicken breasts
1/2 bottle barbecue sauce
4 medium baking potatoes, peeled and sliced thin
1 green pepper, sliced thin
1 red pepper, sliced thin
1 onion, sliced (optional)
ground black pepper
 
Tear two sheets of foil, the length of a cookie sheet. Place one sheet on
the bottom of the cookie sheet. Spoon half of the barbecue sauce in the
center of the sheet. Place the chicken side by side on top of the sauce.
Layer the onions, potatoes and peppers on top. Sprinkle the ground black
pepper on top and then the remaining barbecue sauce. Place the other sheet
of foil on top and fold the edges of the two pieces of foil. Bake at 350ยบ
for 50 minutes or until chicken is no longer pink.
This was great, tasted great, low fat and practically no clean up;
just toss the foil when you are done.
