Thank you for your reply. I tried choosing DejaVu Sans, which
correctly displays kanji in other programs such as Openoffice 3.0, but
the problem persists. I tried changing the "script" to Hiragana but
the variable continues to reset to Latin - it appears to not stick

At the moment, the best option is to spit that large category into
subcategories and toggle these.
Mnemosyne 2.0 supports multiple categories per card, but that version is not
released yet.

Not sure I understand your question completely, but you can use 'activate
categories', to turn on and off selected categories.
