Converting iTunes files to MP3 using iTunes

Hi there It used to be pretty straight forward to do this in previous versions of iTunes. The shift F10 option seems to have changed now. Anyone have directions on how to do it with the latest version of iTunes? Using Windows 7 and Jaws 14. Thx Johny Cassidy Today programme and BBC
