If a message is not deleting, turn your iOS device off and then on again. When
you open mail, the deleted message should be gone. It just means your memory
pointers are getting cluttered.

Hello. If your device is jailbroken, then there is an activator
extension that quits all applications. If your device is not
jailbroken, then you will have to manually close your apps.
Also, IOS has a force quit feature, but I would not recommend
using it regularly.

No. It is up to you to remember to do that from time to time.
I clear the app switcher at the end of most days, just to keep it from
becoming too cluttered.
I've not had performance issues since I have done that. I started being
very intentional about clearing it out often about 8 months ago.
