Applesauce Cake With Caramel Icing

2 cups sugar
1 cup butter
4 eggs
1-1/2 cups applesauce
1 tsp. Baking soda
1 tsp. Cloves
2 tsp. Cinnamon
2 tsp. Nutmeg
3 cups sifted flour
1 tsp. Salt
1 cup raisins
 
Cream butter and sugar; add eggs, 
beat well.  

Add applesauce and soda.  

Sift dry ingredients together and 
add to creamed mixture.  

Add the raisins.  

Bake at 325 in a greased and floured 
tube pan for 1 hour or until done.  

Can be baked in two 9-inch pans at 
350 for 30-40 minutes.
 
NEVER-FAIL CARAMEL ICING:

1 cup butter
3 cups brown sugar
6 Tbs. Milk
1 tsp. Baking soda
 
Combine butter, brown sugar, 
and milk.  

Bring to a boil.  

Add 1 tsp. Vanilla and baking powder.  

Beat well and spread over cake.  

If it gets hard, add a few drops 
of milk.

Applesauce Cake with Raisins and Pecans

1/2 cup butter  
1 tsp. cinnamon
2 cups sugar
1/2 tsp. nutmeg
2 eggs  
1/4 tsp. allspice
2 1/2 cups sifted all-purpose flour 
1/1/2 cups applesauce
1 1/2 tsp. baking soda  
1/2 cup raisins
1 tsp. salt 
1/2 cup pecans

Cream butter and sugar till light.
Add eggs, beating well after each addition.
Sift dry ingredients togehter and add to creamed mixture alternately
with applesauce.
Stir in raisins and pecans.
Turn batter into greased and lightly floured pan (13x9x2-inch).
Bake at 350F about 45 minutes ot till done.  Cool in pan.

(an additional 1/3 cup raisins can be substituted for the 1/2 cup of
pecans, if desired)

[CAKE-RECIPE] Applesauce Cake

Applesauce Cake 

2 1/2 cups margarine 
6 cups sugar 
6 eggs 
2 tbsp. vanilla 
10 cups flour 
4 tbsp. baking powder 
2 tsp. salt 
6 cups water 
3 cups applesauce 
2 tbsp. cinnamon 

Place margarine, sugar, cinnamon, and applesauce in a large mixing bowl. 

Cream on medium speed until smooth and free of lumps. 

Sift together flour, salt, and baking powder. 

Add eggs and vanilla to creamed mixture. Gradually add sifted dry ingredients, 
and water. 

Pour mixture into well sprayed baking pans. 

Bake at 350 degrees for 35 minutes or until knife comes out clean. 

Yield: 50 pieces (2" x 2")
