Banana Cake and Fluffy Cream Cheese Frosting http://localhost:5918/getImage?rid=614216entity=4 Banana Cake with Fluffy Cream Cheese Frosting Recipe source: Mom's recipe with my frosting addition :) Ingredients: 1/2 cup butter, softened 1 1/2 cups sugar 2 eggs 1 1/2 cups mashed bananas (about 3-4 medium bananas) 1 teaspoon vanilla extract 2 cups all-purpose flour 2 teaspoons baking powder 1 teaspoon baking soda 1/2 cup milk Frosting ingredients: 1 (8 oz) package cream cheese, softened 1/2 cup butter, softened 1 teaspoon vanilla extract 3-4 cups powdered sugar (more or less until it's the consistency you like) Directions: In a large bowl, cream the butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each egg. Beat in bananas and vanilla. Combine the flour, baking powder, and baking soda; add to creamed mixture alternately with milk, beating well after each addition. Transfer to a greased 9x13 baking pan. Bake at 350 degrees for 25-30 minutes (or until toothpick inserted in the middle comes out clean). Cool on a wire rack. For frosting, in a large bowl, beat cream cheese and butter until light and fluffy. Beat in vanilla. Gradually add powdered sugar until smooth. Spread over bars. Store covered in the fridge. Generally a cake tin would mean an 8 round cake pan. You could make it in a loaf pan as well. The meringue is obviously part of the cake, but it doesn't say what you are supposed to do with it. I suspect that it is one of those things you are supposed to know. So here is my guess ... spread the meringue after the cake has cooked cooled and bake a little while longer. Meringue: beat egg whites, add sugar rum gradually and continue beating until mixture holds a peak. If a 10 inch tube pan is used, double the recipe; a high cake will result. In a mixing bowl, sift together these dry ingredients. Banana Cake with Cinnamon Glaze 1 1/2 cups flour 1 tsp. ground cinnamon 1/8 tsp. ground nutmeg 1 tsp. baking soda 1/2 tsp. salt 1/2 cup chopped nuts (pecans, walnuts, cashews, peanuts, etc.), optional 1 cup sugar 1/2 cup oil 2 eggs 1 cup mashed ripe bananas 1/2 cup sour cream 1 tsp. pure vanilla extract Cinnamon Glaze: 1 cup confectioners' sugar 1 tsp. ground cinnamon 1/2 tsp. vanilla extract 1 to 2 tbsps. milk or cream Preheat oven to 350 degrees. Line a 9 x 13-inch baking pan with non-stick foil. In a small bowl, combine flour, cinnamon, nutmeg, baking soda, salt, and chopped nuts. Stir until evenly mixed. In a large bowl, beat sugar and oil. Add eggs, bananas, sour cream, and vanilla extract. Beat for 2 minutes until thoroughly combined. Add dry ingredients, stirring only until all ingredients are combined. Pour into prepared pan. Bake for 30 to 35 minutes until lightly browned and top springs back when lightly touched. Let cool to room temperature. Cinnamon Glaze: Whisk together confectioner's sugar, cinnamon, vanilla extract, and milk or cream. Add only enough cream to make a spreadable glaze.
