Hi Melissa,
I've added some finely chopped celery and minced onion to mine. The key is
to chop them as finely as possible.

I never put eggs in my potato salad, and I guess that is because my husband
never wanted it that way and only ate eggs in stuff, like baked goods; he
never would eat any type of eggs, scrambled, fried, etc. I put mayonnaise or
Miracle Whip in my potato salad, chopped onion, sweet pickle relish, and
sometimes, chopped celery, or a dash of celery salt.

[CnD] Recipe Request: Mashed Potato Fudge

2013-12-16 Thread friend_bride_wife
Many years ago, either in 'Better Homes and Gardens,' or 'Ladies Home
Journal,' I came across a recipe for Mashed Potato Fudge. Since then
this recipe has been misplaced. If anyone can assist, I would be
grateful. Thanks in advance.

Re: [CnD] Recipe Request: Mashed Potato Fudge

2013-12-16 Thread Colleen
I googled mashed potato fudge, and I found a ton of recipes. This one sounds
really good.

Ingredients:

1/2 cup unseasoned, well-mashed cooked potatoes (about 1 medium potato)*
3 cups powdered (confectioners) sugar
1 cup flaked or shredded coconut
1 teaspoon pure vanilla extract
3 ounces semi-sweet chocolate
3 tablespoons butter

* You can also bake a medium-size potato and mash it while still hot. The
mashed
potatoes should equal 1/4 cup. Learn how to make Perfect Mashed Potatoes. You
can also use instant mashed potatoes to make this candy.

Preparation:

Bake or microwave the potato until a fork pierces it easily.

While the mashed potatoes are still hot, beat in the powdered sugar and
coconut;
then add the vanilla extract.

Press into a lightly greased 8-inch square pan; set aside.

In a saucepan over low heat, melt chocolate and butter, stirring occasionally.
When melted, pour over top of the potato mixture.

Refrigerate until set and then cut into squares.

Store in an airtight container in the refrigerator.

Makes 64 1-inch pieces.

Hi everyone,
I am considering making these cookies. They sound like a doable project I
might actually finish. At first the part of dipping the tops in chocolate
didn't register. I usually avoid such recipes because they seem too time
consuming. Thanks to Charles, I have great info about melting chocolate,
etc. Please give me your opinions about which brands of chocolate you like
best for this dipping endeavor.

[CnD] Recipe: carrot Pudding.

2013-12-16 Thread Blaine Deutscher
Good afternoon.

I heard of a dish the other day called Carrot Pudding. I was wondering if
any of you might have such a recipe? apparently you steam your potatos
instead of boil them. It almost sounds like razon pudding but it has potatos
in it. They say you can't taste the potato with everything else that's in
it. I guess it's like carrot cake, you don't really notice carrots in the
cake. Have a great day.

Whatever you like the taste of is what you should use. I don't know if one
brand or variety melts more easily or is more smoothly applied than any

Re: [CnD] potato salad recipe

2013-12-16 Thread Jan
My mom always made two different types of potato salad. And I think it was
because she didn't like mayonnaise. She never gave me amounts. The one with
mayonnaise, which I've made, had celery, onions and hardboiled eggs. The
other one had vinegar and oil, which she'd mix together as a dressing and it
had oregano. It didn't have any onions because she didn't like them and no
hardboiled eggs.
