I googled mashed potato fudge, and I found a ton of recipes. This one sounds really good. Ingredients: 1/2 cup unseasoned, well-mashed cooked potatoes (about 1 medium potato)* 3 cups powdered (confectioners) sugar 1 cup flaked or shredded coconut 1 teaspoon pure vanilla extract 3 ounces semi-sweet chocolate 3 tablespoons butter * You can also bake a medium-size potato and mash it while still hot. The mashed potatoes should equal 1/4 cup. Learn how to make Perfect Mashed Potatoes. You can also use instant mashed potatoes to make this candy. Preparation: Bake or microwave the potato until a fork pierces it easily. While the mashed potatoes are still hot, beat in the powdered sugar and coconut; then add the vanilla extract. Press into a lightly greased 8-inch square pan; set aside. In a saucepan over low heat, melt chocolate and butter, stirring occasionally. When melted, pour over top of the potato mixture. Refrigerate until set and then cut into squares. Store in an airtight container in the refrigerator. [CnD] Recipe: carrot Pudding.
Good afternoon. I heard of a dish the other day called Carrot Pudding. I was wondering if any of you might have such a recipe? apparently you steam your potatos instead of boil them. It almost sounds like razon pudding but it has potatos in it. They say you can't taste the potato with everything else that's in it. I guess it's like carrot cake, you don't really notice carrots in the cake. Have a great day. My mom always made two different types of potato salad. And I think it was because she didn't like mayonnaise. She never gave me amounts. The one with mayonnaise, which I've made, had celery, onions and hardboiled eggs. The other one had vinegar and oil, which she'd mix together as a dressing and it had oregano.
