Re: [CnD] how the list has changed

2014-02-11 Thread Julie
I see the paint too, but there are a few of us who do talk that way, and write
recipes that way, smiles.  My ICC recipes are all my own except about 3 of
them, and those had several additions to them that a sighted person would not
include.  I ewrote my first recipe book after I lost my sight, so, the only
thing I had to draw from before, we my sight, and how the books I had b=were
written.

I have to admit, I have a very hard time with a recipe that does not have list
of ingredients, but just tells how it was put together.  I like to put in my
list of ingredients before I go to the store, where I have to have a shopper
guide me, but I like that list I have, so I can refer to it.  I guess I still
kind of do things the way a sighted person would, even though I am blind now,
but it was the way I learned.  So that is how I do it.
Most of my recipes give a list, and then somewhat easier instructions to
follow.  I agree if I see a recipe that says blanch your beans I would wonder
exactly what they meant, if I read, take your beans out of the boiling water
and put them directly into ice water, that is easier for me to follow.  smiles.
But there are a few of us who have lived in both worlds, and have kind of a
hard time taking a recipe and verbalizing it in any other way then the regular
recipe book way,
I say, just enjoy cooking, no matter how you need or watnt to do it!

I remember the reason that I joined this list.  It was not only to collect and
to read recipes, but to also get them from the perspective of a blind person,
whether they are or are not a good cook.  This would include tips and tricks on
how to perform tasks without using eyesight.  For instance, bake until golden
brown.  Do not overcook..  How do you know when something is brown if you
cannot see it?  I'm not looking for answers here, but this is just an example
of what I mean.  The list was that way when I joined.  Someone would ask for a
good cookie recipe, and people who are blind, who has used the recipe they
have, would send it in, along with those very important and helpful tricks and
tips.  Dale's cooking podcasts are a good example of this.

Now, if someone asks for a good cookie recipe, they are most likely to get
several recipes that are copied from an Internet search that they have not had
any personal experience working with.  You can tell that these are copied from
the Internet by the way they are written and spaced.  For example:

1 tsb
brown sugar

3 Tbsp
honey

4 cp flour

1/2 c
chopped nuts

Mix all ingredients well and
roll out to 1/8 thickness and
cut
into squares.

Place on
greased
cookie sheet and bake at
325dg for 10 mins or until
lightly browned.

Notice the abbreviation and spacing?

And if someone asks a question about it, chances are, the one who sent the
recipe doesn't know the answer because they haven't tried the recipe.

I sure do wish that the list would return to the way it used to be:  A list of
tried and true recipes from blind people who give advice based on their own
personal experience with the recipes they send.

This is to Shannon and the list I don't think you have gone over the line of
what you are saying. I agree with you, but also this has caused a lot of
needless discussion going on and on about coffee makers and then branching
off onto other products such as products Hamilton Beach have made and so
forth. I didn't think this list was for discussing all the different
products people have in their kitchen, but tips on how to use them as a
blind person and also to swap recipes. This is my opinion on this subject.
I don't know about anyone else but I am receiving a lot of e:mails that seem
to go on and on, sometimes needlessly and thus clogging up my inbox. I
don't mean to be crabby, but that is the way it is.

I have been reading the conversations on the subject of one cup coffee
makers and I even commented on it talking about my Tassimo. I think the
original question to the list was someone asking about individual coffee
makers and advice on a good drip coffee maker.
I don't want to sound disrespectful but I don't think it helps when someone
is interested in may be purchasing one of these coffee machines and is
asking for advice and many responses are not about the machine but how
expensive it is and that they would never purchase one. To me that isn't
helpful and in a way you are telling others who have these machines or are
wanting to purchase one that they have wasted there money. Which of coarse
it is there money to waste. Sorry if I have gone over the line and offended
anyone because this is not my intention just an observation.

I like the Keurig (one cup coffee maker) because it's always fresh, no
stale coffee, no measuring, can drink tea, cocoa, hot apple cider,
lemonade and not always just coffee. Just to let you know also, you're
not supposed to put coffee grounds in the garbage disposal. I had some
reputable person from Sears to tell me never to do that.

A coffee pot is a kitchen oriented device, while looking for a summer camp
is not. Therefore, the messages dealing with coffee pots are, I think, much
more on topic.

Re: [CnD] Off Topic Messages (Was: summer camps)

2014-02-11 Thread Nicole Massey
Actually, this is off topic, and Dale is rather serious about folks posting
off topic messages to this list.
That said, if someone has a problem with someone else's posts on the list,
send an email to the moderators. They appreciate it, and it isn't
appropriate for a list member to take others to task for off topic posts --
it's the moderators' purview. And if someone does something you don't like
on the list consistently, mail programs both on your computer and on web
based mail systems have ways to filter all a person's messages.
Finally, I tried to send a message to Steve, one of our list moderators, and
got a bounce message, so if anyone has a new email address for him please
send it to me privately. The owner address for this list also bounced, so
I'm not sure what's going on. (Maybe the Mercury in Retrograde Blues again)

[CnD] Beer Bread! Delicious and EASY

2014-02-11 Thread Dale Campbell

Hi Folks!
The Cooking in the Dark show is back after a brief, well a long brief break!
Here is a recipe we make on the first show of the season!
It is easy and delicious!
Beer Bread
3 cups flour
3 teaspoons baking powder
1 teaspoon salt
1/4 cup sugar
1 12 ounce beer, a dark or stout beer works best...
I used Shiner Boch

do not use light beer like Miller Lite, Bud Light, etc.
Directions:
Combine and blend all dry ingredients.
Add the beer and mix well.
Put into a 3 by 8 loaf pan sprayed with vegetable oil and press down
to even out in the loaf pan.
Hint: wet your hands under the faucet before handling the dough to
reduce sticking...

the dough will be pretty sticky.

Bake at 400 degrees F for 60 to 70 minutes.
or until the loaf sounds hollow when tapped on top
The crust will be pretty hard
but it will be soft and tasty inside!
Add our pod cast address to your pod catcher and never miss a Cooking
in the Dark Show again!

With the cake you used The Greek yogurt with how long do you bake it for? It
only gives the temperature from what I read. Maybe I'm missing something.

 Add:
 3 eggs
 4 1/2 teaspoons baking powder
 1/2 teaspoon salt

 1 cup plain yogurt
 2 1/4 cups flour
Beat until smooth, if too thick add a little more yogurt or milk
Bake in 2 round greased and floured pans or
 13 by pan
test for with toothpick after 25 minutes
 cupcakes test after 12 minutes
You can also use fruit yogurt and top with whipped cream and fresh fruit.
I usually frost with chocolate butter frosting.

Is this list really so anal and thoughtless that one lady asking one
question deemed off topic by another member generates all of this? Is this
the face of ACB you really want to present? ACBradio does represent the
organization as a whole to the uninvolved public.

[CnD] About the Guidelines.

2014-02-11 Thread ajackson212
Greg,

The guidelines for the list were sent out on the first of the month for a long
time. They are simple, and also provide information if you want to contact the
owner of the list, or one of the moderators. Instructions for subscribing and
unsubscribing are also provided. These are good reminders to have for
reference.

Hope this provides a different perspective.

Blessings,
