hmm, where do I find a "capreso," machine? I don't mind paying some
extra for a good machine, and flavor is my thing too because I like
to grind my beans.

I forgot to say that I like the cup at a times that use regular ground
coffee because I can measure the coffee to my liking and there is always a
fresh cup and the coffee goes directly into the cup. I can also use it to
heat water for tea, instant soup or oatmeal, etc.

Re: [CnD] what is your FAVORITE coffee maker, why?

2015-11-10 Thread Penny Reeder via Cookinginthedark
In our house, coffee is brewed from freshly ground French-Roast beans,
and we use a French-Press Coffee Pot, as well as an electric kettle. I
fill the pot with water up to the level where it needs to be, then
pour that amount of water into the kettle and turn it on. I grind the
coffee in a Burr Grinder, pour the grounds into the French-Press pot,
pour in the boiling water when it's ready, let it stand for 4 minutes,
then plunge the grounds down to the bottom of the pot and pour the
pot's contents into a warmed thermol pitcher. It sounds like an
involved process, but it really isn't -- I can do it with my eyes
closed! -- and I think French-Press is the best coffee!

Re: [CnD] what is your FAVORITE coffee maker, why?

2015-11-10 Thread John Diakogeorgiou via Cookinginthedark
This is one of my favorite subjects. I am using a capreso machine. If
you are a huge coffee fan, you can really taste the difference in the
way it makes coffee. One thing I really like about it is that it uses
a metal insulated pot. This means that coffee stays hot for several
hours and doesn't get burnt because it is constantly being heated. If
you are purchasing a machine use a cone rather than basket filter. The
reason for th is that when using a basket, the water sits in the oil
created by the grounds.
This is probably more than you wanted though.

Curtis,
I have a Hamelton Beech Maker that makes Individual cups. I like it because
I can make 1 cup at a time. Since I usually only drink coffee for
breakfast, it keeps me from wasting expensive coffee. It has a perminat
washable basket which allows me to use any coffee I prefer and I don't have
to buy those paper filters or those throwaway plastic cups. It has a
removable platform which allows me to use a regular coffee cup or a taller
coffee mug. It has only 1 button. Yep, a real button. I press the button

Re: [CnD] question about a chicken and rice recipe

2015-11-10 Thread Susie Stageberg via Cookinginthedark
This is a crocked version of a classic, butter and salt-rich dish my mother
used to make, wherein you put the raw rice on the bottom of the pan, layer on
the chicken breasts, then top with cream of mushroom/cream of chicken soup plus
Lipton onion soup; melted butter over all. It bakes all afternoon at a low
temp. The rice is never satisfactory in this traditional version, so this one
might be worth a try. I'd worry about the rice turning into glue.

Yes, the cooking time is long enough to cook the brown rice. I also sometimes
use barley instead of rice, or a mixture of grains.

Re: [CnD] question about a chicken and rice recipe

2015-11-10 Thread Regina Marie via Cookinginthedark
Questions are not dumb. Before I do something like this, I prefer to brown my
chicken or other meat just a little on both sides in a little olive oil or
butter before placing in the crock pot.

If you substitute brown rice, increase your water by half, so for half cup
brown rice, add one and one half cups water.

Sounds good. I may fix this too.

Re: [CnD] Flat top

2015-11-10 Thread Gary Patterson via Cookinginthedark
Hello, I use a range that has no buttons or switches. What I did to make it
accessible is a small list of actions to make this range accessible.

I bought a piece of a plastic type of material named Lexann.
I bought this at home depot I believe, (a big box store).

Next I marked places on the Lexann that corresponded with the touch spots.

I then drilled holes in the Lexann so that I could put my finger tip in the
hole and thereby touch the touch spots.

Next, I used Velcro adhered to the panel with the touch spots. The velcro was
adhered to the Lexann. Thus, the Velcro on the Lexann stucked to the Velcro on
the panel.

To protect the position of the template, I made a strip of wood to be under the
Lexann so that if anyone pressed down on the Lexann template, the wood not
permit the template from moving down.

This may sound complicated, but I can utilize every feature of the stove.

It can be done, certainly. Buttons are a good point; most modern stoves/ovens
include flat, touch-screen or similar controls. I have to mark them with that
craft paint that puffs up, and re-apply the marks even so often. It works, but
it's not ideal.

Susie, What brand and model did you choose? I need a new stove, and I like
the option of the texture change and actual buttons. Thanks!

I am about to learn how to cook on a flat cooktop myself, but I got to pick it
and the one I chose has texture changes to indicate where the burners are. It
also has "real" buttons you can feel. If you are having a model forced upon
you, you might have to try various methods of marking it tactilely so you can
get your bearings. Other people here will have thoughts on this, I am sure. I
think, though, that it can be done, so start with "how can I" rather than "I
can't.

How does a blind person cook on the flat top stove? How would we know where the
burners are? They're putting flat tops in our apartments, and when I went to
the blind the center we were only talk to cook on stubs that had the coil
burners.
