[CnD] Butter Ball Kisses Cookies Recipe

2015-12-08 Thread Helen Whitehead via Cookinginthedark
Butter Ball Kisses Cookies Recipe
Another "oldie but goodie" going back to the early 80's when my girls were
little
and I baked a lot of cookies - as did my mother, which is where I got this
recipe
from. My girls always loved the chocolate kiss atop the buttery cookie. This
cookie
does not have the peanut butter in the dough, like the Blossom cookies, but
are more
of a shortbread type cookie dough. You can "dress them up" by drizzling
melted white
or chocolate chips over the tops. I've also substituted the kiss with Andes
Mints
or a chocolate star - lots of variations possible with this basic shortbread
type
cookie dough
Ingredients
* 1/2 pound butter, softened
* 1/2 cup plus 2 tablespoons brown sugar
* 1 and 1/2 teaspoons vanilla extract
* 2 1/4 cups flour
* about 36 chocolate kisses, wrappers removed
* white or crystallized sugar for dipping dough balls into
Directions
1. With wooden spoon, cream butter until fluffy.
2. Stir in sugar and extract, beating by hand to incorporate it into butter.
3. Stir in flour, mixing until well blended.
4. Batter will be very stiff.
5. Taking about 1 tablespoon of dough in your hand, squeeze it into a
compact mass,
and roll into a ball with the palms of your hands (balls should be about 1½"
in diameter).
6. Roll balls in sugar. then place them on ungreased cookie sheet and place
a kiss
or star in the middle of each, pressing it into the ball very lightly.
7. Bake at 350 degrees for 18 to 22 minutes, until cookie is just barely
browned
on the bottom and around edges.
8. Cool cookies on wire rack before storing in an airtight container.
9. NOTE: Good suggestion from Lasaf - use some of the delicious flavored
kisses available
these days...raspberry, caramel, mint...so many flavors, you could change
the flavor
of these little buttery cookies with each batch! Enjoy!

Re: [CnD] Recipe request: Butter cookies: BUTTER BITES

2015-12-08 Thread Helen Whitehead via Cookinginthedark
BUTTER BITES

1 c. flour, sifted

1/2 cup confectioners sugar

1/2 cup butter, softened

1 tsp. vanilla extract

Preheat oven to 300 degrees Fahrenheit.

In a large mixing bowl, combine the flour and sugar. Using a wooden spoon,
blend in the butter and vanilla extract. Dough will be stiff.

Dust your hands with flour, and shape the dough into 3/4 inch balls. Set on
an ungreased cookie sheet and flatten by pressing with the tines of a
floured

fork, crosswise.

Bake approximately 15 minutes, or until a pale golden brown. Remove
immediately from cookie sheet and cool on wire rack. Makes approximately 24
cookies.

Note: Do not place cookies on a warm cookie sheet, as this will cause them
to spread before cooking.

Variation: Add finely chopped blanched almonds, macadamia nuts, or pistachio
nuts. Can also substitute almond extract, lemon or orange oils, or liqueurs.

These little cookies work well for dipping in chocolate, especially when
using almonds. Enjoy.

Re: [CnD] pressure cooker thoughts

2015-12-08 Thread Susie Stageberg via Cookinginthedark
A pressure cooker is a specially designed pot that cooks food under high
pressure, thus cooking it faster and rendering some less expensive cuts of
meat, for instance, more tender. The pressure comes from steam that is built up
inside the pot. The lid has a valve for controlling the steam and making sure
the pot doesn't explode all over your kitchen.

I got a pressure cooker for Christmas a couple of years ago and I like it.
Modern ones are very safe and easy to use. I would suggest that if you are a
patron of the National Library Service, you go look up a book called Pressure
Perfect, which gives recipes and describes how this appliance works and how to
use it. If you use Bookshare, they have several pressure cooker books. Pot
roast, for example, can be cooked in considerably under an hour.

Re: [CnD] Question: what can the blind do in a restaurant?

2015-12-08 Thread Curtis Delzer via Cookinginthedark
anything you, and the employers insurance are comfortable with. I
worked with Orange Julius for 3 weeks once, making the Juliuses,
until their insurance figured I'd get hurt by "something," like,
would you believe, an electric mixer? GAD!
was in the late sixties so I couldn't kick much about it, but
everyone enjoyed my Juliuses. :)

At 02:10 AM 12/4/2015, you wrote:

Hi,

As a programmer, I started programming before I even knew my
limitations. I didn't know what the blind can and cannot do when it
comes to programming, and I frankly didn't care: programming was fun
and I did it, and that was all that mattered.

However, when it comes to food-related stuff, for most stuff, you
need to get training, and you need to know what you can do better
than others, and what you're not so good at, and what you definitely
cannot do, so that you can do what is called "targeted learning",
where you slim down what you're going to learn to what you will
absolutely need, and go for them.

My spouse who is completely blind likes to one day own a restaurant.
Even if she doesn't achieve this goal, she enjoys reading about
food, learning how to cook, and so on. I've read that there are
blind restaurant owners and chefs and so on, and this email is for
those people.

Since you guys are much more experienced at this than I am, can you
help her decide what to learn? What positions in a restaurant are
blind-friendly, to coin a term?

Best,
Parham
