CROCKPOT CANDIED PECANS

These are at the top of my holiday MUST MAKE list. Great DIY holiday gift. This 
recipe works well with almonds, cashews or walnuts!

Prep Time: 5 Minutes

Cook Time: 3 Hours

Total Time: 3 Hours 5 Minutes

Serves: 10 -12

Calories:299 

 

1 cup Sugar

1/2 cup Brown Sugar

1.5 Tablespoons Cinnamon

1 Egg White

2 teaspoon vanilla

4 cups Pecans or almonds, cashews or walnuts

1/4 cup Water

 

In a large bowl, mix together sugar, brown sugar and cinnamon. Set aside.

In a separate, bowl whisk together egg white and vanilla until it becomes a 
little frothy.

Place pecans into a slow cooker prepared with cooking spray. ( I used a 4.5 qt 
crockpot for this single batch). Pour egg white mixture over pecans and stir 
until nuts are evenly coated.

Next sprinkle cinnamon sugar over pecans, and stir until nuts are all coated 
well with sugar. Cook covered on LOW for 3 hours, stirring every 20 minutes. 
When 20 minutes are left, pour 1/4 cup of water into the crockpot and stir. 
This will make the outer shell nice and crunchy.

When cooking time is up, spread nuts out on a cookie sheet to cool for 15/20

Some kitchen counters are  more heat resistant than others.  Engineered
stone, brand name Corian, is not.  That's why we didn't buy it when we
remodeled our kitchen.  Not sure about the older surfaces.  But a lot also
depends on the feet at the bottom of the air fryer.  How tall are they, at
least 1/4 inch?

5-Minute Candied Pecans

Yields: about 1 cup

These sweet and crunchy pecans are the perfect cozy snack! They require very 
little time to make, and they disappear even faster. The pecans will keep for 
at least two weeks if stored in an airtight container, and the recipe is easily 
doubled or tripled to serve more. (Just remember to use a larger pan!)

o   3 tbsp (40g)  

 Truvia

o   ½ tsp ground cinnamon, or to taste

o   ⅛ tsp salt

o   2 tsp water

o   1 cup (112g) pecan halves, left whole or chopped

1.Cut a large sheet of foil, and place it on the counter.

2.In a small bowl, stir together the Truvia, cinnamon, and salt. Mix in the 
water until all of the ingredients are incorporated.

3.Add the pecans to a small pan, and cook over medium-high heat, stirring 
frequently, for 2-3 minutes or until fragrant. Reduce the heat to medium, and 
add the cinnamon mixture. Stir constantly with a spatula until the pecans are 
completely coated. Transfer the mixture to the prepared foil, and let the 
pecans cool completely to room temperature and the coating has hardened and 
turned crunchy.

Notes: I highly recommend chopping the pecan halves! This creates more surface 
area, so you’ll have a larger cinnamon-coating-to-nut ratio.

Granulated sugar or brown sugar can be substituted for the Trvuia.
