FAST FIXIN FRUIT CAKE

Ingredients
1 pkg. Duncan Hines white or yellow cake mix
1/4 c. oil
2 eggs
1/2 c. water
1 can pie filling (cherry, apple, peach, lemon, pineapple, etc.)

Method
Preheat oven to 350 degrees. Pour oil into 13 x 9 x 2 inch pan; tilt pan to 
cover bottom. Put cake mix, eggs, and water into pan; stir with fork or 
spoon until blended (about 2 minutes); scrape sides and spread batter evenly 
in pan.
Spoon pie filling into batter; use a fork to fold into batter just enough to 
create marbled effect. Bake at 350 degrees for 35-45 minutes until toothpick 
comes out clean. May be sprinkled with powdered sugar.

Lovely oven except when your internet goes out or your Wi-Fi stops working
for some reason. I'm not willing to take that chance. Then if you have an
electricity glitch in the middle of cooking, how does the cooking time
recover? You start over and the oven isn't smart enough to compensate for
the cooking already finished and you have to guess what to do. I can do that
already without any help from Alexa. It isn't her fault when these things
happen, but in many places the Wi-Fi isn't that reliable in my opinion, not
for cooking nor for the laundry.

Pumpkin Bread

Ingredients:
2/3 cup shortening
2 2/3 cups sugar
4 eggs
1 lb. cooked pumpkin - either canned or cook & strain fresh pumpkin
2/3 cup water
3 1/3 cups flour
2 tsp. baking soda
1 1/2 tsp. salt
1/2 tsp. baking powder
1 tsp. cinnamon
2/3 cup chopped nuts
2/3 cup raisins
Method:
Cream shortening & sugar till light & fluffy. Stir in eggs, pumpkin & water.
Blend in flour, soda, salt, baking powder & cinnamon. Stir in nuts & 
raisins. Pour into 2 large or 3 small loaf pans.
Bake at 350 degrees for 60 to 70 minutes, or until a pick inserted in center
comes out clean.

   French Dip Sandwiches

Serves four.

ready in:  under 30 minutes.

ingredients
1 pound cooked roast beef, thinly sliced
2 beef bouillon cubes
1 1/2 cup water
1/8 teaspoon onion powder
1/8 teaspoon garlic powder
1/8 teaspoon dried oregano
1/8 teaspoon dried thyme
1 small bay leaf
4 (6-inch) French rolls, sliced

directions
Preheat oven to 350 degrees F.

Separate beef slices and place in casserole. Combine bouillon cubes and
water in a saucepan. Bring to a boil, stirring until bouillon dissolves. Add
onion powder, garlic powder, oregano, thyme, and bay leaf to bouillon
mixture. Pour bouillon mixture over beef slices.

Bake for 10 minutes or until beef is heated through. Heat rolls in turned
off oven. Mound beef on rolls. Discard bay leaf. Ladle bouillon mixture into
small cups. Serve sandwiches with sauce for dipping.

PIG EATING CAKE

1 box yellow Duncan Hines butter cake mix
1 env. Dream Whip
4 eggs
1 can mandarin oranges, undrained
1/2 c. cooking oil

Mix above well. Flour and grease 3 (8 inch) cake pans. Pour mixture into
cake pans. Bake 30 minutes at 350 degrees. Let cake cool completely.

ICING:

1 (13 1/2 oz.) carton Cool Whip
1 (No 2) can crushed pineapple, drained
1 pkg. instant vanilla pudding mix

Mix well. Spread on cake. Refrigerate until ready to serve.

I am looking for a special recipe. Back in the seventies, on the box of a
Duncan Hines yellow cake mix, was a recipe for a cake that the box said
was like eating pudding in a bowl. I actually made this cake, and it was
wonderful. It was very moist and pudding like, so that you had to eat it
out of a dessert dish. Does anybody know what I am talking about? I would
love to have the recipe to make it again if anyone has it.

Easy Lemon Chicken Piccata

Ingredients:
. 2 to 3 Tbsp. butter
. 1 Tbsp. olive oil
. 3 Tbsp. all purpose flour
. 1/2 tsp. salt
. 1/4 tsp. pepper
. 4 chicken breast cutlets
. 1 cup dry white wine
. 1/3 cup lemon juice
. 3 Tbsp. capers

Method:
1. In a large skillet, combine 1 Tbsp. butter and 1 Tbsp. olive oil. Heat over 
medium heat until butter is completely melted.
2. In a shallow bowl, combine flour, salt, and pepper. Dip chicken cutlets into 
mixture to coat.
3. Place chicken in the skillet with melted butter and olive oil; saute over 
medium heat 4 to 5 minutes on each side or until cooked through.
4. Remove chicken from pan; add lemon juice and wine. Bring to a simmer and 
reduce heat slightly. Let sauce thicken.
5. Add remaining 1 to 2 Tbsp. butter and capers to complete the sauce. Return 
chicken to pan and spoon sauce and capers over the chicken.

Blackberry Cobbler

Ingredients:
? 1/2 stick butter, melted, plus more for greasing pan
? 1 1/4 cups plus 2 tablespoons sugar
? 1 cup self-rising flour
? 1 cup whole milk
? 2 cups fresh (or frozen) blackberries
? Whipped cream and/or ice cream, for serving

Method:
Preheat the oven to 350 degrees F. Grease a 3-quart baking dish with butter.
In a medium bowl, whisk 1 cup sugar with the flour and milk. Whisk in the 
melted butter.
Rinse the blackberries and pat them dry. Pour the batter into the baking dish. 
Sprinkle the blackberries evenly over the top of the batter. Sprinkle 1/4 cup 
sugar over the blackberries. Bake until golden brown and bubbly, about 1 hour. 
When 10 minutes of the cooking time remains, sprinkle the remaining 2 
tablespoons sugar over the top. Top with whipped cream or ice cream . . . or 
both!

Old Fashioned Rice Pudding

Ingredients:
2 cups milk
1/2 cup uncooked Carolina Rice
1/4 teaspoon salt
3 egg yolks
3 tablespoons sugar
3/4 cup heavy cream

Method:
Bring milk to boil; stir in rice and salt. Cook over hot water until milk is 
absorbed, about 30 minutes. Beat egg yolks with sugar and cream. Combine 
with rice mixture. Add raisins, if desired. Pour into baking dish. Bake in 
preheated 350 degree oven for 15 minutes, until top browns.

Makes 8 servings.
