[CnD] Filling Muffin Tins

Hi, Everyone,

 

I love muffins, and I enjoy baking them. But I do not enjoy filling the
muffin cups with batter, and no matter what technique I try, it is a messy
job. I have used a small scoop, a collapsible measuring cup, and even just a
table spoon, but still it's messy.

 

Does anyone have a technique for filling muffin tins with little mess.

Depending on the thickness of the batter, try putting the batter in a ziplock 
bag, snipping off the corner and squeezing the batter into the cups.

I've heard turkey basters do a good job with this too, but I haven't tried it 
myself. I tend to turn muffins into coffee cake.

 I respect that what ever works is good. I myself wouldn't want to mess with 
batter and plastic bags. Since you have to check the batter level in the pan as 
well as  what your inserting from,, you're not going to completely avoid a 
messy proposition. Since recipes generally recommend that you fill the muffin 
pan two thirds full, it works for me to use a scant quarter measuring cup.

I have done that, too, or also baked as bread in loaf pans. I like the idea
of using the turkey baster, but wouldn't it be hard to clean that tube and
guarantee all the dough is out of it?

This is assuming you are right handed? Hold the muffin cup in the palm
of your flat left hand, fingers open. Hold it slightly over the bowl.
Use a small scoop, like one of those plastic coffee scoops that have
one end like a square spout-like shape. If you don't have one, a deep
measuring spoon should do. It's too hard to use it with a shallow
anything. Dip this into the bowl, tap to drop excess, then upend it
into the cup.

Another idea could be that you could use a pastry bag. I've never used
it for batter though, just icing for cookies and such.

You could also just set the cups into the muffin tin and use a small
cup. Something with a smaller mouth than a measuring cup. A coffee
scoop could be used here too. Set down newspaper before you start.
That'll help with the mess as well.

Quite frankly, I really don't make messes when I bake so it's always
interesting when other people do.

Just take the bulb off and stick the tube on the end of the faucet and turn it 
on full blast. A bottle brush also helps a lot of these types of things.

If you get one of those ice cream scoops that have the push button scraper 
built in, These will make really nicely shaped muffins.

Also, grease the top of your muffin tins between the cups.  Then any dribbles 
are easily cleaned up when you have removed the muffins.

The best way I've found is to use an ice cream scoop that has a feature on
it that you can pour right into the cup. An ice cream scoop, or at least the
one I have, is 1/4 cup, just enough to fill a large muffin tin.

This is how I fill muffin tins. What you need is a funnel. The funnel that 
works for filling muffin tins is called a canning funnel -- also sometimes a 
"jar filler." It has a wide top and a wide opening at the bottom, wide enough 
to fit inside a half-pint-size canning jar. Stick the funnel inside each 
greased muffin cup, scoop in a third-to-a-half cup of batter, then move on to 
the next muffin cup. It also helps to cover the top of the pan with a light 
film of oil or butter so it's easy to remove any cooked-on batter drips. The 
canning funnel -- make sure to buy one made of metal! -- is also a perfect 
biscuit and round cookie cutter, and an excellent guide for distributing 
pancake batter into a griddle.HTH, Penny
