Original Recipe Yield 2 dozen muffins

6 WEEK BRAN MUFFINS
Breads

DRY INGREDIENTS:

1 (15 oz.) box bran flakes with raisins
3 c. sugar
5 c. flour
3 tsp. soda
1 tsp. salt
1 c. wheat germ
1 box raisins
1 c. 100% bran

WET INGREDIENTS:

4 eggs, beaten well
1 c. vegetable oil
1 qt. buttermilk
1 whole orange, rind & all, put through food processor first
1 apple, skin as well, put through food processor
1 banana, mashed
1/3 c. molasses
1 tsp. vanilla

Combine the dry ingredients and mix well. Combine the wet ingredients and 
mix well. Slowly add the wet ingredients to the dry. You will need a BIG 
bowl
for this. Pour into muffin pans, filling 2/3 full. You can make them all, 
about 75, or you can store the batter in the refrigerator. It will last 6 
weeks
covered in the refrigerator. Bake at 350 or 375 degrees for about 15 
minutes.

REFRIGERATOR BRAN MUFFINS
Breads

5 c. sifted flour
5 tsp. baking soda
1 tsp. salt
2 c. boiling water
1 c. sugar
1 c. oil
2 c. molasses
1 qt. buttermilk
4 eggs
5 c. All Bran
Raisins

Put 2 cups bran and raisins in bowl and pour on boiling water. Cool.

Mix sugar, oil, molasses, eggs, buttermilk and bran in bowl. Add soda, salt 
and flour and stir well. Then stir in cooled bran and raisin mixture. Store
in covered container in refrigerator. Keeps for at least 2 months and 
improves in flavor.


Spoon into muffin pans, 2/3 full. Bake 400 for exactly 19 minutes. If in 
microwave put in a cup (one cup takes 1 or 1 1/2 minutes, although texture 
is changed).
Muffins are better flavored if they stand for 6 hours before eating. 116 
calories. (Can be stored and used whenever needed.)

Breads

Pour 2 cups boiling water over 1 box raisins and 2 cups Kelloggs 100% All 
Bran, set aside and cool. Stir together:


1 c. white sugar
2 c. molasses
1 c. salad oil
4 eggs, well beaten
1 qt. buttermilk

Mix together:

3 c. more all bran
5 c. flour
5 tsp. soda
1 tsp. salt

Add to above combination. Lastly mix into all the above the cooled raisin 
and bran mixture. Pour into covered jars in refrigerator. Keeps perfectly 
for
2 months. When you want muffins, take out amount needed, replace remainder 
in refrigerator. Stir batter and fill muffin tins 3/4 full. Bake at 400 
degrees

exactly 20 minutes.

15 oz. box seedless raisins
2 c. boiling water
1 c. sugar
1 c. corn oil
2 c. molasses (or 1 c. plus 1 c. light corn syrup)
4 eggs, well beaten
1 qt. buttermilk
5 c. flour (white, rye, soy or wheat; can use 2 cups white and 3 cups of 
another)

5 tsp. soda
1 tsp. salt

Pour boiling water over 2 cups of All - Bran and the raisins; set aside to 
cool. Put sugar in large mixing bowl. Add oil, molasses, eggs, buttermilk 
and
remaining 3 cups of All - Bran. Stir, add raisin - bran mixture. Combine 
flour, soda and salt. Add to bran mixture. May be baked at once or 
refrigerated
for up to 2 months and baked as needed. Bake in greased muffin tins at 400 
degrees for 20 minutes. Yields 5 quarts of batter, or 60 muffins. You can 
freeze
the baked muffins to serve at a later date. The number of muffins may vary 
due to which size muffin tin you use.

Breads2 1/2 to 3 dozen muffins

1 c. Kellogg's All Bran
1 1/4 c. seedless raisins
1 c. boiling water
1 c. molasses (Grandma's)
1/2 c. corn oil
2 eggs, well beaten
2 c. fresh buttermilk (not powder)
2 1/2 c. flour
1 tsp. salt
2 1/2 tsp. baking soda
1/2 c. sugar
Chopped nuts (opt.)

Preheat oven to 400 degrees. Combine first 3 ingredients. Set aside to cool. 
Mix next 4 ingredients and then add dry ingredients, then the cooled first
mixture. Stir in an additional 1 1/2 cups dry all bran. Fill muffin pans 
(lined) about 3/4 full. Bake in 400 degree oven 20 minutes. Check after 15 
minutes.
Cool in pans. Yield: 2 1/2 to 3 dozen muffins. This recipe is 150 years old. 
Always moist. Freezes well.

 Refrigerator Bran Muffins

Ingredients for Refrigerator Bran Muffins:

1 cup boiling water
3 cups whole bran cereal (such as Kellogg's All Bran)
1/2 cup margarine or room temperature butter (you may also use 1/4 cup 
margarine and 1/4 cup oil plus 1 tbsp. oil, if desired)

1 1/2 cups white sugar
2 tsp. vanilla extract
1-2 tbsp. maple syrup, optional
2 eggs
2 cups buttermilk*
2 1/2 cups all-purpose flour (you may use half all-purpose and half whole 
wheat, if desired)

2 1/2 tsp. baking soda
1/2 tsp. salt
1 cup raisins

Grease or line muffin tins.
In a small bowl, combine ONE CUP ONLY of the bran cereal with one cup of 
boiling water and let it stand until it has cooled.Set aside the remaining 2 
cups of bran cereal. All of the bran cereal will be added to the batter 
later on.
In a large bowl, cream together margarine and sugar until well-blended. Add 
vanilla (and maple syrup) followed by the eggs, beating them in one at a 
time, until all ingredients are incorporated. Add the buttermilk, beating on 
low to avoid spatters. Mixture will be quite loose. Add flour, baking soda 
and salt, beating on low, only until blended.
Fold in remaining 2 cups of bran cereal and raisins. Follow this by folding 
in the bran mixture that has cooled.
Fill the lined muffin tins and bake on centre oven rack at 400 degrees for 
20 minutes (25 minutes for extra large muffins) until tops are golden brown 
and firm to the touch.


Cool and serve. Store the baked Refrigerator Bran Muffins in an airtight 
container. Remaining batter should be kept in an airtight container in the 
fridge - it can last for weeks.
You may substitute these ingredients for buttermilk: 2 tbsp. lemon juice or 
vinegar added to enough milk to make 2 cups, you may also use light sour 
cream or plain yogurt. It is worth noting that buttermilk really enhances 
the texture and taste of these muffins.
