I have also always used this easy-does-it method. Just putting them in a pot of cold water. I've never found hard-boiled eggs to be that fussy. Soft-boiled eggs are a different story. You really can't start them in cold water and expect them to come out right, but since I never make them anyway, it doesn't matter. I'll have to try the method of putting them in rapidly boiling salted water to see if peeling is easier. The salt should change the boiling temperature of the water a little bit, so maybe there is something to it. I would say 10 minutes of boiling is enough. You want the eggs to sit, covered, on the turned off burner, for 20 minutes. Then plunge them into cold water to crunch the shells and peel. Works every time. Good luck. Hi, Wendy: Bring the water to a roaring boil, add a little salt to the water to keep the eggs from cracking, and add the eggs. Cook the eggs for around 20 minutes then remove them from the stove, pouring the water out. Place the eggs on a separate plate to cool.
