Re: [CnD] Biscuits from scratch
Hi, Rebeca. I got the recipe I use off a YouTube channel. It makes 16 biscuits (I use a 2-inch biscuit cutter.) We usually split the biscuits so that there are 6 left out to snack on and 10 get vacuum sealed in pairs to take out for reheating when one of us wants a snack. The YouTube guy didn't freeze his butter, but I do because it is hot in Hawaii, and the butter melts when I get it straight from the fridge because I use my fingers to do the pastry blending. The freezing buys me some time. 4 cups all-purpose flour 1 Tbsp baking powder* 1 tsp. baking soda 1 tsp salt 1 Tbsp. sugar 1 cup (2 sticks) butter, cubed and frozen for 30 mins 1-1/2 cups buttermilk Note: Buttermilk substitute = 2/3 cup plain yogurt plus 1/3 cup milk for 1 cup buttermilk 1 cup yogurt plus 1/2 cup milk equals 1-1/2 cup buttermilk *Baking powder substitute in this recipe equals: 1 tsp. baking soda 3/8 teaspoon salt 1-1/2 tsp. cream of tartar Cannot make baking powder substitute ahead of time and keep for later use. Combine flour, salt, sugar, baking soda, and baking powder. Cube butter in to 1/2-inch pieces. Cut butter in to flour mixture--pea-sized pieces. Pour in milk, fold in till just moistened; add a little bit of milk if necessary to moisten. Lightly flour work surface; pat dough out to 1/2-inch thickness; cut in to biscuits between 2 and 3 inches. Put on baking sheet lined with parchment paper; place with sides touching. Brush with buttermilk or melted butter. Slide in to preheated 425dg oven, bake for 15 mins. Re: [CnD] Biscuits from scratch
Hi Rebecca, These are the biscuits I make most often: Combine in food processor or large mixing bowl: 2 cups flour, 2 tsp. baking powder, 1/2 tsp. Kosher or sea salt. Cut in with pastry blender, 2 knives or food processor 1 stick very cold butter. When mixture looks like fat crumbs, add 2/3 cup cold milk. Combine briefly with food processor or fork. Pat out to a thickness of 3/4-1 inch, cut out biscuits. Place on parchment-lined baking sheet. Refrigerate until ready to bake (no longer than an hour or so), or bake immediately in hot oven (450-degrees) for 15 minutes. When I have more time and the buttermilk available, I make this recipe from Martha Stewart. The biscuits are fabulous! Buttermilk Biscuits (A Martha Stewart Recipe) 2 cups flour 2 tsp. Baking powder 1 tsp. Salt 1/4 tsp.Baking soda 1/2 cup (1 stick) cold butter 1/2 cup buttermilk 1/2 cup heavy cream Preheat oven to 375 degrees. Combine dry ingredients. Cut in butter. Combine buttermilk and cream, and stir in with fork. Pat dough out to 1-inch thick rectangle. Cut out biscuits. Place 1 inch apart on ungreased baking sheet. Brush with more buttermilk. Bake for 22-24 minutes, until lightly browned. Serve immediately. If you want to use biscuits for shortcake, add from 1-3 TBSP. sugar to the dry ingredients. Both of these recipes make delicious biscuits! Enjoy! Re: [CnD] Biscuits too crumbly with homemade mix?
Who knows. Maybe we all ought to just go back to lard and see how that works. :) :) :) Karen At 09:18 AM 9/1/2020, you wrote: The shortening has changed lately and does not feel the same. This is good for us because they had to get rid of the trans fats. But is that possibly why recipes come out a little differently than they did before? If they come out too crumbly, maybe just use a little less. This mix doesn't have the chemical agents for de-clumping that are in the store-bought mixes. -Original Message- From: Cookinginthedark On Behalf Of Marilyn Pennington via Cookinginthedark Sent: Tuesday, September 1, 2020 10:36 AM To: cookinginthedark@acbradio.org Cc: m51penning...@gmail.com Subject: Re: [CnD] Basic Biscuit Mix Recipe and a question Yes, I do make Helen's baking powder biscuits. But I have a question. While the recipe tastes much better than Bisquick because of the lack of chemical taste, my biscuits just fall apart when I try to butter them. I know that many homemade biscuits come out great and can be sliced open to butter or whatever. I'm wondering if some of you more seasoned cooks, (no pun intended), can look at this recipe and tell me what I can change to make the biscuits come out better. Any help would be appreciated! (Please see below). Karen Basic All-Purpose Baking Mix 6 cups all purpose flour 3 tablespoons baking powder 1 tablespoon salt 1 1/4 cups vegetable shortening (butter-flavored or plain) 1. Combine flour, baking powder, and salt in a large bowl. 2. Cut in shortening with pastry blender until mixture resembles coarse corn meal. Store in a container with tight-fitting lid. Will keep for up to 2 months. Makes about 2 quarts. For Biscuits: Stir together 2 1/4 cups baking mix with 2/3 cup milk. Knead 10 times on lightly floured surface, roll out and cut into biscuits or skip the kneading and simply drop dough onto an ungreased baking sheet. Bake at 425*F for 10 to 12 minutes or until lightly browned. Makes about 10 biscuits. For Pancakes: Stir together 2 cups baking mix, 1 cup milk and 2 eggs until blended. Do not over-mix. Ladle 1/4 cupfuls onto hot greased griddle or skillet and cook until edges are dry and top is bubbly, turn over and cook until golden brown. Makes about 14 pancakes. For Waffles: Stir together 2 cups baking mix, 1 1/3 cups milk, 1 egg and 2 tablespoons vegetable oil until blended. Pour batter into center of hot greased waffle iron and cook for 5 minutes or until steaming stops. Makes about 12 (4-inch) waffles. For Dumplings: Stir together 2 cups baking mix and 2/3 cup milk just until soft dough forms. Drop by spoonfuls into boiling liquid, cover and cook for 10 minutes without lifting the lid. Makes about 10 dumplings. Tip: For Buttermilk Baking Mix, add 9 tablespoons dry buttermilk powder to the basic mix. ___ Cookinginthedark mailing list Cookinginthedark@acbradio.org http://acbradio.org/mailman/listinfo/cookinginthedark ___ Cookinginthedark mailing list Cookinginthedark@acbradio.org http://acbradio.org/mailman/listinfo/cookinginthedark ___ Cookinginthedark mailing list Cookinginthedark@acbradio.org http://acbradio.org/mailman/listinfo/cookinginthedark ___ Cookinginthedark mailing list Cookinginthedark@acbradio.org http://acbradio.org/mailman/listinfo/cookinginthedark ___ Cookinginthedark mailing list Cookinginthedark@acbradio.org http://acbradio.org/mailman/listinfo/cookinginthedark

If my help is not wanted, just let me know. The main sections are as follows: breads and muffins cakes and frostings casseroles chicken dishes cocktail goodies cookies desserts hamburger dishes relishes meats salads salad dressings soups vegetables hope this helps, Nancy Martin - Original Message - From: Lora Leggett kc8...@comcast.net To: cookinginthedark@acbradio.org Sent: Monday, December 03, 2012 2:24 PM Subject: Re: [CnD] the Our Special book OK, I have not opened up the box yet to see if there are just magazines or a cookbook yet but I will get my lazy self busy because I guess I was waiting until closer to Christmas so I would have something to open up, LOL. I got one box from earlier that has magazines from within the last year. I never had this magazine before but have heard about it for years. I will write a note and let you guys know what is in this box. Please send the biscuits with the buttermilk and self-rising flour in them. Tried to send this a while ago but don't think it went. If you want, you can do the first one and I can do the second one. I was really surprised when I looked through the books and found out I knew a couple of the people who submitted recipes. Especially in the first one, our friend Sandy submitted many of them, and then in the second one there are some recipes from Vicki. She was the first person I corresponded with in Braille who was someone I did not know in school. I will put up the sections of the second book this afternoon which are pretty much like the first except the second book has a little more and is larger. We can work together on it, no problem.
