Great kitchen tip. I have never thought to put my beans in a colander to soak.
It would be a time saver. One of the wire baskets that go into a deep fryer pot
would work equally well. So would a large wire strainer work, the kind made of
screen material that look like a door or window screen. Those come in large
sizes too if you search long enough. In a pinch, those also work for sifting
flour through.
I digress, but thanks for the tip.

Soaking beans can be done more easily if the beans go in a collander first then
the collander and beans go in a container of water. When it's time to change
the water, lift the collander out of the container and dump the water then
replace with fresh water and continue soaking.

Hello, All!!

I have 3 cans of cannellini beans in my pantry.

I want to know if I can use them for other dishes besides soup.

The reason I am asking is because I cannot eat

Any long-soaking, long-cooking beans; they just go right through me

So it is not long before I have some ah, embarrassing problems with them.

For some reason, I can eat cannellini beans without those problems.

But, then, I buy the canned beans, so someone else did most of the work
before I

Get them.

Thanks for any suggestions. I don't think these would work in

Things like tacos. These beans are the kind I think you would

Have in some Italian casseroles and dishes.

Marie

Cannellini beans with sausage.
2 cans of cannellini beans
1 can of chicken broth (14 1/2 ounces)
1 carrot
1 large onion
1 stick of celery
basil, oregano, salt, pepper. and a couple bay leaves
Optional Can of tomatoes Stewed or whole crushed.
1 pound of sweet or hot Italian sausage. I prefer the hot.

Chop up the onions, carrot, celery, and garlic
Add some olive oil to a pot and fry up the a above.
Rinse the beans well and add to the pot with the broth and season to taste
Meanwhile, boil the sausage in a little water in a frying pan until cooked
thru. Cut into bite size pieces and add to pot. Let simmer for a half hour
and serve with some Italian homemade bread. Or buy some if you must.

RJ
That is the quick and easy way.
You can cook the cannellini beans from scratch if time permits. I believe
the taste is better if you do.
