Thank you! I was using the 32-bit image! Duh!!!  I retried with the 64-bit
image and it is all good!

Check which Debian live image you downloaded - I think there are two versions
-- one 32 bit, one 64 bit.

To be honest, I'd be tempted to just use a standard Debian installer. 

If you have a machine which only has UEFI and refuses to boot a 64 bit
Debian live at any point - at that point, you can look to say whether it's 
one of the outliers with a 32 bit BIOS and 64 bit CPU.

There was a rash of netbooks a few years ago with 2GB RAM for just this reason 
they were sold with cut down 32 bit Windows versions.

In this case you probably got an "i386" ISO image for 32-bit systems.

Try one of the "amd64" ISOs at
  https://cdimage.debian.org/debian-cd/current-live/amd64/iso-hybrid/

Their EFI partition is supposed to contain
  /efi/boot/bootx64.efi
(I have debian-live-11.1.0-amd64-xfce.iso here and expect no change in
the newer 11.2.0 ISO.)

The laptop is no more than two years old and it has an Intel Core i3-1005G1
processor.
Also, I checked the USB stick and it only has the 32-bit EFI program in the
EFI boot folder.

I assume based on what Andrew said that maybe the UEFI needs to be 64-bit.
I guess I will take the thread to the debian-live mailing list and ask why
there is no 64-bit UEFI program and their plans to add one.

What model of laptop? What's the processor?

I ask because I had a similar issue the other day with an old Intel Baytrail
notebook where the UEFI is 32 bit and the processor is 64 bit - using a
Debian multi-arch installer worked. I used the one with firmware.

Did you do the same as with the Debian ISO or did you use "flash-knoppix"
to install the ISO onto the stick ?

Does this note appear unconditionally or does it show up only if the Debian
USB stick is present ?

Far fetched idea:

What happens if you replace the partition table on the USB stick by a
GPT which marks only the small EFI partition ?

I.e. print the partition table of the USB stick, delete it, create a
new partition table as GPT and add a partition of the type for EFI
with start and size as printed from the original table.
(The way to express the EFI partition type differs from partition editor
to partition editor. See for example
  https://wiki.archlinux.org/title/EFI_system_partition#GPT_partitioned_disks
)

The big partition of Debian ISOs encloses the small one, which is not
allowed in GPT. But the big one exists only to protect the ISO 9660
filesystem from partition editors. It is not needed for booting.

Unable to boot UEFI laptop from Debian 11 Live USB stick

I have followed Debian's instructions (

for creating a bootable USB stick but it fails to boot on my UEFI laptop.
In contrast, I am able to create the same for Knoppix 9.1 following their
instructions. So not sure why the debian one doesn't work.

The debian instructions basically say to do a normal cp of the hybrid iso
unto the raw USB device as follows (assume USB stick is on /dev/sdf):

cp  debian11_hybrid.iso  /dev/sdf

However, although the USB stick ends up with the 2 corresponding
partitions, and I can mount/see the content of those, my laptop refuses to
recognize the USB stick during boot and so it won't boot off it.

I have tried the Debian 10 and Debian 11 hybrid images on 2 different USB
sticks and I get the same result.
