Nagios or bash script could also be used but that's not the point.
Generally it would be nice if dovecot could report errors  internally like
postfix and  it's notify_classes.
This is of course a wish :)

Shouldn't you rather figure out why it's freezing and fix that? It's 
not normal.




But if you worry about that kind of thing then monit is a good tool.  It 
can be configured to watch memory usage, number of processes, check a 
port, then take action and do something like alert an admin and reboot 
the service, etc
