There was a YouTube video still linked on the Elecraft site that showed that
it took 7 minutes Ha Habut its has sadly been removed by its owner.   id
say Under 10 hours if you have only basic skills in assembly.   One great
thing is that the manual seems to be very good and is created for the
experienced and  inexperienced all the way.

Many tips that have come in over the years have been incorporated into the
K3 Kit Assembly manual.

Build the K3 just like you walk, one step at a time, and it will go right
together. At this point a great many K3 kits have been assembled quite
successfully by very average Hams, some as their first kit ever.

It largely depends on your skill level and organization skills.  I had mine up 
and running in under five hours with regard to actual assembly and calibration 
time.  Parts inventory, layout and reading the assembly manual took an 
additional two hours.  So, eight hours is a reasonable estimate for the average 
to advanced kit builder.

Of course, fully enjoying the product will take the rest of our lives.  :-)

The power screwdrivers we use in the factory are high performance commercial 
units that have a finely adjustable torque clutch that limits how far each 
screw is tightened. This insures both a consistent assembly of the radio and 
that the screws are never overtightened.

We set it at a very low setting that is in fact lower than what most average 
people would manually tighten screws to. This actually is more reliable than 
manually tightening each screw. We carefully check this and also inspect 
assembled units for over-tightened screws.

Most, if not all, consumer level power screwdrivers can not be set for this low 
of a tightening torque, if they can be set at all.

I have assembled two, and I'd allocate about 8 hours in no fewer than two 
sessions. inventory the small fasteners into some sort of containers and watch 
out for minor screw size differences and use the one described in the assembly 
instructions rather than the one just like the previous screw. The instructions 
are excellent and complete. Pay attention to details. 

I sat next to Cody Adams at the Watsonville factory and watched him build a 
factory assembled unit. He does it a LOT quicker, with no compromises in build 
quality.  He has all the small fasteners in trays, power screwdriver set for 
the right torque, and is really set up for mass production.

Got mine last January.  It took me 2 football playoff games plus about 1
hour.  Works great.  I now have a P3 and KPA500.  A lot less time for them.
