I'd remove the servers from the load balancing solution during a quiet time to limit the amount of clients - and therefore potential helpdesk calls - that will fail over if the CAS they're connected to disappears from under their feet. I normally do this the night before. Also, if you have applied any custom OWA graphics etc, you'll need to re-apply those after the RU has completed. Otherwise, no special instructions. One thing which can catch the unwary. The proper way to apply the Exchange 2010 SP1 rollups is to open a command prompt with elevated Administrator rights and run the rollup update from there.
