The warnings about those objects are removed in 2010 sp1. But yes, you can 
safely remove them for OLD SERVERS. You need to leave the ones for the current 
server(s).

You should leave the old AG in place. You may want to remove the SERVERS node 
under the old AG (which should be empty anyway) as there are (corner-case) 
situations where its presence can cause issues.

I've run into issues with not being able to mail enable legacy public folders 
after migration to 2010, and it's starting to look like removing the empty 
Servers container may be related to that problem.

What about mounting whatever you find as a Public Folder? Mixed with Outlook
Help it's a pretty good way of 

a) Giving users the information they need.
b) Getting users to do things the way you want them to e.g. Distribution
Lists, Views, Favourites etc.

97 - bought a basic step-by-step book, and no sod bothered to read it!

But do a search in a Web Engine for Outlook+Help - or tell them to use the

Sorry, I'm a little late on this one.  
However, couldn't you just pop the Exchange 5.5 Server CD in, run
setup.exe and select Remove at the setup screen? This is assuming that
you have an Exchange 5.5 server CD available. I just did this the other
day and it worked very well.

standpoint for my DB? Are there any other considerations besides raw performance 
that I need to take into account? I like Raid1 because you don't get a 
performance hit if you lose a drive, unlike a Raid5 array. But does Raid5 
perform better for some reason that I'm overlooking?

still going to need more drive space. 

Eseutil is theutility that will recover that white space for you, 
but only temporarily. If you've been paying attention to the list (today 
especially), it's suggested only to be run after contacting PSS. It's a 
dangerous utility that can do more harm than good, if not done right. 
May I also recommend a product called Servers Alive. www.woodstone.nu/salive

One of 
the most important features, at leastin your situation, isto have it 
monitor disk space on each of your servers. It will alert you when disk space 
drops below a limit you have determined.

I didn't want to uninstall Exch, cause the box at that time was already
unstable and they wouldn't let me touch it (I was a minion).
So, I set all the services to disabled and compacted the IS. That did
the job. The actual Exch SW really doesn't use that much space.

And in the registry, hklm\ccs\services

Delete out all the exchange related ones.  Then remove out of
hklm\software remove the exchange server related keys.
