INGREDIENTS 
1-1/2 cups dried navy beans

1/2 pound sliced bacon, diced

3/4 cup chopped onion

1/2 cup chopped carrot

1/3 cup chopped celery leaves

4 cups water

2 cups milk

2 teaspoons molasses

1-1/2 teaspoons salt
DIRECTIONS
Place the beans in a Dutch oven or soup kettle; add water to cover by 2 in. 
Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand 
for 1 hour. 
Drain and rinse beans, discarding liquid. Set beans aside. In the same pan, 
cook the bacon over medium heat until crisp. Using a slotted spoon, remove to 
paper towels; drain, reserving 2 tablespoons drippings.. In the drippings, 
saute onion until tender. Stir in carrot and celery leaves. Return beans to the 
pan. Add water. Bring to a boil. Reduce heat; cover and simmer for 1-3/4 to 2 
hours or until beans are tender. 
Stir in the milk, molasses, salt and bacon. Remove about 2-1/2 cups of 
soup; cool slightly. Place in a blender or food processor; cover and process 
until pureed. Return to the pan; heat through. Yield: 6 servings.

INGREDIENTS 
1/2 pound fresh brussels sprouts, halved

1/2 pound parsnips, peeled and cut into 1/2-inch cubes

1/2 pound fresh baby carrots

1 medium sweet potato, peeled and cut into 1/2-inch cubes

2 medium red potatoes, cut into 1/2-inch cubes

2 medium white potatoes, peeled and cut into 1/2-inch cubes

1/2 cup butter, melted

1-1/2 teaspoons rubbed sage

2 garlic cloves, minced

DIRECTIONS
Place vegetables in a greased 13-in. x 9-in. x 2-in. baking dish. In a small 
bowl, combine the butter, sage and garlic; drizzle over vegetables. Cover and 
bake at 375° for 40-50 minutes or until tender. Yield: 8 servings.

Jack Daniel's Marinade

1/4 cup Jack Daniel's whiskey
1/4 cup soy sauce
1/4 cup Dijon−style mustard
1/4 cup minced green onion and tops
1/4 cup firmly packed light brown sugar
1 teaspoon salt
Dash of Worcestershire sauce
pepper to taste

Combine all ingredients. Blend well. Use to marinate shrimp
or scallops for one hour. Beef, chicken or pork should marinate
refrigerated overnight. Use to baste the shellfish or meat as
it is grilled or broiled.

Drew Carey's Apple Coffee Cake 

2 cups flour 500 mL 
1 1/2 cups granulated sugar 375 mL 
2 teaspoons cinnamon 10 mL 
1 teaspoon salt 5 mL 
1/2 cup oil 125 mL 
2 large eggs
1/4 cup coffee (liquid) 50 mL 
1 1/2 teaspoons vanilla extract 7 mL 
1 1/2 cups apples, peeled and sliced 625 mL 
1 cup chopped nuts 250 mL
Butter or nonstick spray 

Grease a Bundt pan with butter or nonstick spray. Mix all other ingredients 
together in a bowl. Pour mixture into pan. Bake at 350 degrees F (180 degrees 
C) for one hour.
Serves 10 to 12.

Ultimate Fudgy Drizzled Brownies

Brownie Ingredients: 
1/2 cup butter or margarine
2 ounces unsweetened baking chocolate 
1 1/4 cups granulated sugar 
1 teaspoon vanilla extract
2 large eggs 
1 cup all-purpose flour 
1/2 teaspoon baking powder 
1/4 teaspoon salt 

Drizzle Ingredients: 
1/4 cup semi-sweet real chocolate chips 
1/2 teaspoon vegetable shortening 
Heat oven to 350°F. Grease bottom only of 8-inch square baking pan. Set aside. 
Melt butter and chocolate in 2-quart saucepan over low heat, stirring 
occasionally, until smooth (4 to 7 minutes). Remove from heat. 
Stir in sugar and vanilla. Add eggs, one at a time, mixing well after each 
addition. Add flour, baking powder and salt; mix just until all ingredients are 
moistened and brownie mixture is smooth. 
Spread brownie mixture into prepared baking pan. Bake for 25 to 33 minutes or 
until brownies just begin to pull away from sides of pan. (DO NOT OVER-BAKE.) 
Cool completely. 
Place chocolate chips and shortening in small microwave-safe bowl. Microwave on 
MEDIUM (50%) power 1 minute. Stir; continue microwaving, stirring occasionally, 
until chocolate is melted and smooth (1 to 2 minutes). Drizzle chocolate over 
cooled brownies. 
Makes 25 brownies
Tips:
To substitute unsweetened cocoa for unsweetened baking chocolate, use 3 
tablespoons unsweetened cocoa plus 1 tablespoon butter for each ounce of 
unsweetened baking chocolate. 
Reduce baking temperature by 25°F if using dark or nonstick baking pan. 
To prepare brownies in 13 x 9-inch baking pan, double all ingredients. Bake for 
35 to 40 minutes or until brownies just begin to pull away from sides of pan. 
For the tenderest brownies, stir brownie mixture until smooth; do not over-mix. 
Variations:
Stir-ins: 1/2 cup of stir-ins (nuts, baking chips, toffee bits, etc.) may be 
stirred into brownie mixture before baking. 
Raspberry-Marbled: 1/4 cup seedless red raspberry jam may be swirled into 
brownie mixture before baking. Dollop tablespoonfuls of jam onto brownie 
mixture; swirl with knife. 
Cappuccino Cream Cheese: Stir together 1/4 cup spreadable cream cheese and 2 
teaspoons coffee flavoring syrup in small bowl. Spread half of brownie mixture 
into pan. Dollop with cream cheese mixture. Spoon remaining brownie mixture 
over cream cheese mixture; swirl brownie mixture and cream cheese mixture with 
knife. 
Espresso Flavored: Dissolve 1 tablespoon instant espresso powder in 2 teaspoons 
hot water. Stir into brownie mixture before baking.

4 to 5 Vidalia or Sweet onions, sliced 1/4 inch thick

1/4 cup butter

1/4 cup sour cream

3/4 cup grated Parmesan cheese

10 butter-flavored crackers, crushed
DIRECTIONS
In a skillet over medium heat, saute onions in butter until tender. Remove from 
the heat; stir in sour cream. Spoon half into a greased 1-qt. baking dish. 
Sprinkle with cheese. Top with remaining onion mixture and crackers. Bake, 
uncovered, at 350° for 20-25 minutes. Yield: 4-6 servings.

Fettuccine with Lamb and Mint

12 ounces fettuccine 
1/2 tablespoon vegetable oil 
2 cloves garlic, chopped 
3 green onions, chopped 
1 pound ground lamb 
1/4 teaspoon salt 
1/8 teaspoon ground black pepper 
3 tomatoes, seeded and chopped 
1/2 cup tomato juice 
4 tablespoons chopped fresh mint 
2 tablespoons pine nuts, toasted 
Prepare fettuccine according to the package directions; drain, cover and set 
aside. 
Heat oil in a large skillet over medium-high heat until a drop of water sizzles 
in the pan. Add garlic and green onions. Sauté for 1 minute until softened but 
not brown. Add lamb; sauté just until the pink color disappears, 6 to 7 
minutes. Crumble lamb into small pieces using a fork while cooking. 
Drain excess fat; return skillet to the heat. Season lamb with salt and pepper. 
Add tomatoes and tomato juice, heating thoroughly, about 3 minutes. 
Transfer to a large bowl; toss with fettuccine. Garnish with mint and pine 
nuts. Serve immediately. 
Makes 6 servings.

Nectarine-Chicken Salad

4 cups sliced Washington nectarines
3 cups cubed or slivered cooked chicken
1 1/2 cups thinly sliced celery
1/2 cup thinly sliced almonds, toasted
1 green onion, thinly sliced
Dressing (recipe follows)
Combine all ingredients except Dressing; pour Dressing over fruit mixture and 
toss gently. Refrigerate 1 hour or longer to let flavors blend. 
Makes 8 servings
Dressing: Combine 1/2 cup mayonnaise, 2 tablespoons each vinegar and honey, 1/2 
teaspoon curry powder and 1/8 teaspoon each salt and ground ginger; mix well.
