QTPro is easy, but not fast nor free.  It also will take longer but give a 
smaller file.

iSquint is a free program which is under very active development.  It will 
let you take much more control over the process and even will let you batch 
convert several files (which I tend to do overnight).  It will let you 
choose to use mpeg4 which is faster but not as compact as H264 or whatever 
it is that QT uses.

Go get the January MacWorld, they have an article about exactly this.  
The very simplest way is to get Quicktime Pro, open the movie, and  
select Save for iPod in the file menu...

I just got an ipod video--lucky me! And I am wanting to take an imovie 
I made and put it on the ipod. Does anyone know what format I need to 
use. Can I do it from within imovie or Final Cut Pro? If not, how might 
I do this?

It uses MP4 video format. If it can save as a .mp4 file, it should work.

iMovie has a save for iPod option under the export advanced options 
window.  That'll make it iPod ready.
