it being above average. Big Bob Gibson is very highly spoken of and I've
used his sauce and dry rub many times. Check out www.roadfood.com and you'll
probably find reviews on most of these places.

Man, you're making me hungry!  I haven't had good NC bbq since my aunt and 
uncle moved out of the Raleigh-Durham area (whew, he finally graduated!), but 
now I'm wishing I had a good excuse to drive up there!

I might can share some insight on North Carolina BBQ and Ed Mitchell, "THE 
PIT" from Raleigh, NC.  Although I have never been to "The Pit" there are many 
places around like his.  

BBQ in North Carolina is considered a delicacy like wines are to some other 
people.  By the taste of the BBQ you can often tell where in the state the BBQ 
was made.  People take BBQ VERY SERIOUSLY in NC.  

If you had to pick the capital of "eastern NC BBQ" it would be Wilson, NC 
where Ed is from.

Eastern NC BBQ is a mixture of vinegar and peppers - with a few other minor 
spices thrown in.

If you are use to a tomato based BBQ sauce - this is a shock at first.  
However, I've learned to love both types.

the wall in downtown Raleigh-I think-I'll find out the name. Best

That's what you get in Nashville with a BBQ sandwich. You have to request it 
without the slaw if you don't want it.

BBQ in North Carolina is considered a delicacy like wines are to some
other people.  By the taste of the BBQ you can often tell where in the
state the BBQ was made.  People take BBQ VERY SERIOUSLY in NC.  

 

If you had to pick the capital of "eastern NC BBQ" it would be Wilson,
NC where Ed is from.

 

Eastern NC BBQ is a mixture of vinegar and peppers - with a few other
minor spices thrown in.

If you are use to a tomato based BBQ sauce - this is a shock at first.
However, I've learned to love both types.  

Eastern NC BBQ is always pork, rarely pork ribs.  Usually whole hog.
Usually not smoked - just cooked.  You can take just the pork shoulder
and cook it this way.  The sauce can be held towards the end and mixed
in.  

 

After it is cooked - it is either chopped or pulled and then the sauce
is mixed in.  

 

I would summarize it as - good - but different.  

 

So if you are traveling down I-95 and around mid North Carolina decide
that you want to stop for some BBQ - be prepared - because often they'll
look at you funny if you ask for tomato based BBQ sauce.  Usually all
they have is vinegar / pepper based.
