Well I had chrubuntu installed. It has more to do with the MC client and
how you want the game experience to be. You need surprisingly decent specs
to run MC client (which is to say: not running client and server on the
same system) fluidly. You could run it on a 2GB Chromebook but prepare
yourself for sluggish performance and low distance rendering. Keeping in
mind that this is for a child, that might be perfectly acceptable. YMMV

Well it depends on how far you are willing to go to get good performance
and ease of use. if you only really care about minecraft running but, not
very fast you could use crouton (linux running in a chroot). If you want a
little more speed but, dont care to remove ChromeOS then look into dual
booting ChrUbuntu. If you are looking for it to behave like a normal
computer then you are going to need to reflash your firmware. If you are
more than the causal linux tinkerer and have heard of something called
core-boot before then, I recommend that for the learning experience.

If you reflash what you would get is the flexibility to do whatever you
could possibly imagine because core-boot is itself a tiny linux
environment. Also ChromeOS would no longer be a thing. That could be good
or bad depending on how much you like it.

tl;dr Running linux on the chromebook is a prerequisite to getting
minecraft running on it. It is not for the feint of heart.

I've been a little underwhelmed by the performance of mine. It's a 2GB
model and I loaded chrubuntu. It worked well enough for terminal-based
stuff I guess but I don't know about something like MC.

How about a Chromebook (or other cheap/low-powered/used laptop) tied to a real 
machine somewhere via VNC/Remote Desktop or similar technology.

Then maybe there's the best of both worlds; power where it should be but 
protected and toughness/low price where it's likely to be abused.
