Just to be sure you didn't miss this: on MacOS you can't open a gnucash file by 
double-clicking 
on it. Gnucash will ignore what you clicked and will open the file it had last 
opened anyway. If 
you want to open another gnucash file you need to do that from within gnucash 
using File-
>Open...

Thanks so much for the help. I tried opening the recovered files on my old
mac laptop. It said an older version of the file wasn't found and wouldn't
open, so I copied everything back to the desktop (it's original location),
and it opened. But when I try to open the most recent version (up to Feb
2021), it automatically only opens a version that goes to June 2019. Seems
like an odd glitch.

Luckily this is a far better situation than I thought I was in, so I'm just
getting back to work from here. But I thought I'd float that info your way
in case it sheds some sort of insight.

Again, thanks so much for the help everyone! I'm not where I hoped to be,
but at least this isn't devastating anymore.

That is unlikely, as the Windows build comes with SQL built-in.
Nothing special to configure or extra files to install like there is on
Linux or Mac.

May I suggest another possibility?

The previous install of GnuCash, for whatever reason, used SQL, and as long
as that was working, the fact that SQL was being used is invisible to the
user.

System crashed, files recovered.

New system set up, GnuCash installed, but configured to use GnuCash
internal file system, not SQL.

New GnuCash files that are set up with the new system will work just great,
but the recovered files will not be compatible until SQL is installed and
configured.

I would not use MSWord or LibreOffice to look at it because those are 
word processors and not straight text editors.
One poorly placed fat finger could write formatting to the data file 
really messing it up.

Notepad is safer not sure about Wordpad.

.MMDDHHMMSS.gnucash files in the same directory as the
.gnucash file. They all give the same error. There are also .txt
files with the same names.

I recovered the data with EaseUS Data Recovery. I am attempting to recover
the same data with a different program at the moment, in case that's the
issue.

You did not mention OS/Distro ...

How did you recover the files?
Are you sure you recovered your data files and not your "metadata" files? 
Trying to open a metadata file as a data file will definitely cause this
error.

Something else to look at:  How large is the file you recovered?
Do you have any files named .MMDDHHMMSS.gnucash in the same
directory as .gnucash?

What do you get from:

file /path/to/file.gnucash

Were you using SQL?  It is possible you did not re-install the required
SQL modules when you re-installed your computer.

No the default is xml.

Indeed, those files only store metadata. The actual file is where you chose to 
save it back when you created it. This is just like in any other application. 
The only thing gnucash does different is that it tries to reopen your last-
used file automatically when you close and reopen gnucash.

I installed all of these.  I believe the original data was saved in 
sqlite3.  That is the default, isn't it?


But wait a minute, where, actually is the data stored?  I was assuming 
it was the *.gcm, but these files seem to be nothing but config files.

In what format did you save your gnucash data?

Assuming you built gnucash with dbi support enabled, you may be missing dbi
drivers for your data format.
If your file was not saved as xml, try installing package libdbd-sqlite3,
libdbd-mysql or libdbd-postgresql depending on how you saved your data.
