 The Goan Culinary Club  Event at O Coqueiro on the 14thAugust,2012

Four months after initiating the Goan
Cilinary Club, co founders Odette and Joe Mascarenhas with members
declared the Club opens to the public. As a kick start to the
Culinary festivities to herald in World Goa Day on the 20th August, the meet 
was held at O Coqueiro one of the first restaurants
in Goa serving traditional Goan food.


Co founder Odette Mascarenhas
introduced the Panel membersnamely…Master
Chef Urbano Rego, noted historian Maria de Lourdes Costa Brava
Rodrigues. former GM of Taj Joe Mascarenhas son of the legendary Goan
Chef Minguel Arcanjo (Masci), and herself,  who with their
expertise bring to the fore authentic Goan recipes of member
establishments. She explained the objectives of the Club namely 


1. To promote and Preserve Goan cuisine globally…
Recipes
shortlisted are put on a ‘Global’net online and sent to different countries 
with the help of Mr Rene
Baretto (forefather of World Goa Day), so that Goans across the world
could avail of the ‘standardized
recipes’.


 2 .Educating the youth
and help preserve the legacy of our culinary culture … Conducting
classes for students where food writer Odette Mascarenhas gives a
lecturette on the history of Goan cuisine followed by a demonstration
by the Chefs. MES college demonstration was by Mr Sylvester D’Souza
of Sheela Bar and Restaurant followed by a demo for Fr Agnel Catering
Institute by Edia Cotta of Alila Diwa and Don Bosco college students
by Mr Peter Fernandes. 


3.To promote Christmas sweet making in
villages … 


4. To work to ensure quality
ingredients’…tamarind, kokum,
toddy, vinegar, poie, sausages etc are available to be used and
served in all restaurants. 




5.Starred Hotels are working in tandem to promote a ‘corner’
for Goan cuisine. 




6.Star Hotel chefs as well as local
chefs interactwith each other to
gain the right methods and ideas on Goan cooking from each other.
Forgotten preparations like the Samarachi Kodi, Godshem, Aard Maas
etc are brought to .the fore for discussion.  


She also
introduced the members of the club who over the months have worked
tirelessly in forming the platform of learning and participating to
authenticate Goan recipes. Maria de Lourdes Costa Brava Rodriguesthen gave a 
presentation
of the History of food down the ages. Keeping in mind with the themes
of Gen Next involvement with the Club, Joel Gonsalves gave his own
composition of the famous beatles number ‘Yesterday’his lyrics on nostalgic the 
youth were about the Goa of yesteryears.
Followed by impromptu speeches by Shoanan Gonsalves (St Xaviers
College Mapusa), Jinelle and Fatima (Don Bosco College).


There was an
interactive question and answer session on how the Club should now
progress.


The event ended
with happy hour, tambola and traditional Goan delicacies prepared by
Chef Peter Fernandes of O Coqueiro.

GOAN CULINARY CLUB - Goa Chapter.

Minutes of meeting held at resort Rio on the 11thJune, 2012.

Present:Odette and Joe Mascarenhas, Rego, 
Michael Mascarenhas, Maria Lourdes,
Sylvester and Vinita D’Souza,
Pete Fernandes,Miriam Gracias ,
Vijendra Singh, Anjali, Kamat,
 Sunil Mathai,  Exec Chef Sunil Kumar.



1. The meeting was hosted by Resort Rio courtesy Mr Sunil Mathai.

2. New invitee for this meeting was Miriam and Chef Vijendra 
of the Grand Hyatt.

3. The aims and objectives were
 explained for the benefit of the 
new invitees and formal introductions done to make all comfortable.

4. Odette gave a brief of all the past activities conducted by the members 
in the last 3 months.

5. The Goan dish sampled was prawn curry and there were 6 participants 
who brought their respective samples.

6. There was an interesting discussion following the tasting and all 
unanimously decided that the sample of Chef Peter Fernandes of 
O’Coqueiro was the best and closest to what mother makes at home.

7.  Closely followed by the sample of Sylvester D’Souza of Sheela 
Restaurant  which had the Saraswat flavor (Ooman).

8. The sample of Sunil Kumar of the Marriotts was in third place…was 
a slightly of the thicker consistency but the taste was accepted by all.

9. Chef Rego and Maria Lourdes contributed interesting facts of the 
past which was well received by the members.

10. Future activities
 and initiatives were discussed which could be carried out by the 
members during the
 Global Goan week from 10thAugust to 20thAugust.



One of the initiatives was to cook Goan food and distribute to the under 
privileged or the Old Age home, one in South Goa and the other in North Goa.
Another tentative suggestion was to have a cookery competition open to all.


12. Sunil Kumar of the Marriotts suggested that we do a live demonstration of 
Goan food with Odette which could be filmed at the Hotel. This could then be 
put on the net through U tube. Master Chef Rego was willing to do 
the demonstration but needed permission from his seniors.





13. Cookery classes for students in Don Bosco by Chef Peter would be 
undertaken this month after talking to the Principal
 of the college.







14.Sylvester brought it to the notice of all present that he was thankful to 
chef Rego for giving him the culinary inputs so that he could start his 
own restaurant in Vasco.

Hi Rene
Recently I have been filming in Portugal and Goa to trace the Portuguese route 
and how much that initial exploration has changed the world.
We will have fifteen of Britains leading chefs  for dinner on the 24th of 
August giving a feedback on the menu and the food and I will be sharing some 
facts about the great Goan culinary traditions.
The documentary will be screened in Cannes on the 5th of September and we need 
some good luck to get it picked up by a great broadcaster  and them wanting it 
to go global.
I can then celebrate Global Goan Cuisine in a Global manner and showcase our 
great culture to the world. So we need luck lots of it

 In Celebration of Global Goan Culture and Cuisine we would like to present a 
 month 
 long menu celebrating Goan cuisine with and without the Portuguese influence.
 
  
 MEXILHAO FRITO AMBOTIK***
 
 
 Mussels marinated in Goan red masala, rolled in semolina, fried and served 
 with a hot  
 sour sauce known as AMBOTIK.
 
 
 Or
 
 FEIJOADA
 
 
 Pronounced Fay JO Aad this represents diced spicy sausages cooked with 
 butter beans 
 in a rich masala with diced peppers, red onion  tomato, served with toasted 
 ciabatta. 
 (The Goan bread normally served would be Poi which is similar)
 
 Or
 
 OYEMIO ani CHONAY XEC-XEC MISSAL
 
 Mushrooms and chickpeas tossed in the classical Xacutti masala with chopped 
 chili and 
 fresh coriander, served topped with Shaev Gaanthia (variation of Bombay Mix) 
 and soft roll. 
 (Xacutti is explained below and is repeated on the menu this time in a 
 different form) In Goa 
 during the monsoons this preparation abounds as several spieces of wild 
 mushrooms abound. 
 Snails are also a delicacy
 
 
 MAINS
 
 BOLINHAS de CAMARAO COM MOLHO de BALCHAO
 
 
 Crushed potato cakes filled with diced prawns tossed with chopped shallot, 
 garlic, ginger and 
 chili, served on a bed of Balchao masala. (BALCHAO is a classic Shrimp 
 pickle in Goa. 
 The base preparation which can be prepared as a gravy is cooked painstakingly 
 over several 
 hours. Ours takes approximately twelve hours to prepare, though domestically 
 on a traditional 
 fire it could be spread over two days.)
 
 Or
 
 FRANGO NO ESPETO CAFREAL A'LA ZAMBEZIANA
 
 CAFREAL originally brought by the Portuguese from Mozambique and a few 
 variations have 
 developed over the years. Ours is a blend of the two! Leg of Corn Fed Free 
 Range chicken
  marinated the Goan way with freshly ground spices and condiments, 
 chargrilled in the tandoor 
  served with Goan Coconut Curry , slices of grilled tomato   sliced fried 
 potato with salad.
 
 XACUTTI de CORDEIRO 
 
 The king of curries if ever there was one and something, restaurant kitchens 
 would love to 
 avoid making. Over twenty-one ingredients go into the making of this great 
 curry painstakingly 
 and individually roasted prior to being pureed and made into the curry we 
 know. Organic lamb
  from the RHUG estates in Wales is used to make the Xacutti, served with 
 garlic rice.
