Just one word of caution -- when storing unprocessed food in oil, keep
it refrigerated. There is a small risk of salmonella:

In the cemetery at Boot Hill, Tombstone, Arizona (seen by my DH.):

He was right and we was wrong,
But we hung him anyway and now he's gone.
