The WTBs All Terrain, formerly the All Terainasaurus (sp?) are remarkably 
good at the 'one tire does all' thing. I would choose them, and in fact I 
do, for just what you describe. 

But tires are tough, so many variables, like track, conditions, riding 
style and rider competence.

Agree. It's easy enough to "air down" a dozen or two psi, for off-road, and
then pump back up when returning to pavement. Softer tires have a larger
contact patch.

How about Big Apples? I had them on my 700c Atlantis. Not fast but
comfortable and tough.

Thanks for the recommendations.  We are going to be in the Blue Ridge
mountains, and the recent discussion has been to include Mulberry Gap,
which does have a decided emphasis on the single track.  I'd be doing
these bits unloaded, the loaded parts are more forest service road
business, for which the supremes have always been fine for me.  I was
considering adding some tire texture for the Mulberry portion, but how
much is the question. I'm more inclined at present toward the Extremes
than the 'raptors.

I regularly ride my Bombadil on and off road (i.e. smooth dirt and
gravel) with 700c x 50mm Schwalbe Big Apples... These are my favorite
tires.

I had them on my Atlantis and they wear like iron!  No flats after
thousands of miles, and they have the right amount of tread for off
road use with nice knobs on the sidewalls, but not on the center, so
they are nice for on road use as well.

I used a pair of 700x50 Marathon Duremes on a 50% off-road touring/
camping trip. They worked great on and off the road. Maybe a tiny bit
slow-ish on the road, but they surprised me with their grip in the
dirt.

Fitted on my Hunqapillar, there was still plenty of room.

I've ridden some non-paved roads with Marathon Dureme 700x40 on the
Sam Hillborne.  They make a 700x50 that should fit an Atlantis.  That
would be my first recommendation.  Bigger tire.  Otherwise, the
Extreme.  Have a 26x2.00 on one bike.  Like the tire a lot.  A touch
slower, maybe, than a Supreme.  But on a tour, not enough to make a
difference, IMO.
