Thanks for the tip Karl! Those look nice but currently no ear flaps in 
stock. I'm pretty close to Portland so I'll have to check out Rivelo 
sometime soon. RandiJo  is also localish and 
they just released their new line of caps 
: waxed canvas, wool, ear 
flaps and not. They look great and I just ordered two, stoked to support 
small-scale craftsmen/women making quality goods. 

Patrick, on the Oregon coast our precipitation generally does not freeze 
and so I am concerned with keeping it out (I know, wool is wicking...until 
it's soaked). I do see your point, I have a waxed canvas Filson hat that 
can become a moisture trap on hot days, but our hot days are limited and 
the RandiJo caps have a lining that I imagine will be effective at limiting 
bogginess.

Speaking of headgear, I mention this not as a suggestion, but as an
anecdote: Just bought a Leatt cycling shell to wear over (Riv content) a
thick Woolywarm outer jersey, the one with the 4-or-5-button neck and rear
pockets, since my other cycling jacket is too tight. This has a hood that
can be collapsed and held in tuck with magnets, but also a stick-on magnet
for your helmet, so that a magnet on the inside top of the hood can hold it
in place. I don't wear helmets, so that feature is lost on me, but I
thought it a nice touch.

I have 3 hats for different temps.  One is an Alpaca hat with earflaps 
thinnish.  Very warm.  2nd is Ibex Coppi Merino cycling cap with ear 
flaps.  3rd is a fleece lined nylon running cap again with ear flaps.  Key 
is that my Nutcase helmet has the spindial to easily adjust to various 
thickknesses.  Alternatively you can get some knot ear covers that button 
onto your helmet straps and line with fleece and wear a beanie.

It is has a few features:

   1. Not a huge brim, but bigger than a cycling cap
   2. Has a little nifty way of lowering some material down over your ears, 
   and off your ears when you don't need it.
   3. Comes in orange!

I got one size too small so that it would not blow off, hoping it would 
stretch a bit and it hasn't yet!

Doesn't get below 30 degrees F here in Nashville much,

I asked them a few weeks ago. They said the *new iteration of this hat will 
NOT include ear flaps*. Disappointing as I was planning on this one for 
this winter...

  Yes !  Balaclavas are my favorite winter headwear. I have thin ones, 
thick vintage Patagonia Powerstretch ones and this wondrous super thick 
Wind Pro X-Treme Hood from Serius that I wear out walking when it's near 
zero outside or I want some instant heat indoors on a cold day.  Encircling 
the whole head sans face rather than just a hat does wonders. Even the a 
thin balaclava worn under any cap works .

I am patiently waiting for Randi Jo Fabrications to release their new round 
of waxed canvas flip-up caps, they look fantastic! Smallish brim and extra 
thick ribbed wool earflaps. They look perfect for cold rides, and in my 
case I'm also interested in blocking the noise from our consistent 
afternoon summer winds.

Any hat made from Polartec Wind Pro specifically. It's a denser weave than 
regular fleece, sticking to me a "just right" balance . The marketing claim 
says 4x the wind resistance compared to regular Polartec (100, 200 etc.). 
Forget Windstopper or anything with a barrier/laminate as it's sweaty and 
inhibits hearing. 

Even layering a thin hat over a thin balaclava works really well , 2 thin 
layers rather than one thicker layer.
