I just wrap it around as best I can and then just try to not spend too much 
time staring at the back of the brake levers!

Some good advice here. Another top tip for troublesome cloth: soak it in 
water before you wrap. It helps it stretch, lay flat (not bunch and kink as 
much), and as it dries, it shrinks a bit so it's nice and tight.

BTW, I only do this if I'm having trouble with a particular brand of tape, 
and/or bar shape. I usually try to wrap it dry first, and if I end up with 
lumps, etc, I'll unwrap entire side, throw it in the sink for a quick soak, 
and re-wrap. Works for me.

The Riv video shows the upper section being done from the brake lever up. 
Recently I tried ending both sections at the brake lever and found that it 
really works well. It makes the hemp twine thing unnecessary, but you can 
still do it just for looks. It works really well for a harlequin weave. For 
a single color, just be sure that you wrap the two sections in opposite 
directions, so the tape arrives at the brake lever on each side.

The riv video way is the way I've always done it when I rode drops ("cheater 
strips" at the brake clamps and starting from the ends and finishing at the 
stem, then twine or tape). Trying to work with cloth around the brakes without 
using the strips a PIA or next to impossible (at least for my limited skills). 
There are multiple ways to deal with bar tape though. Two separate strips going 
opposite ways and finishing at the brake lever, harlequin patterns with 
two-tone tape or the same color, etc. I've also started at the stem and 
finished at the bar ends wrh some success but that takes work and trial and 
error to secure with the barend shifter--and still leaves the brake covering 
challenge. I think that this is one of things that doesn't have just one 
correct answer.

This makes sense for non-aero brake levers, which the OP is using. For aero 
brake levers would a similar approach work?

I think it's harder to lift the brakes off the bar, ahead of taping, when 
one also has "aero" brakes, with their cables taped down to the bars. Not 
impossible, but harder. The thing I learned to do is just practice with a 
scrap roll of cloth tape... practice can lead to muscle memory, if not 
logical understanding of the topological "twists" of wrapping.

It's possible to get a neat wrap with a figure-8 around the hoods, but also 
possible to anticipate the natural flow of the tape and place a 3-inch 
strip to cover the gaps that might otherwise be left.

Traditionally, bars were wrapped under the brake levers. You mount the 
brake levers on the bare bars to get the location correct. Then you take 
the levers off the clamps, and wrap the bars over the clamps. Attach the 
brake levers again, and done. It's neat and clean, and doesn't have the 
bunched-up feel that you get when you criss-cross the cork tape around the 
brake levers. The cloth tape is strong enough that it won't be cut when you 
tighten the brake levers against it. (It probably wouldn't work with cork 
tape.)

If you plan to shellac, also do this before you attach the brake levers, so 
you don't get shellac all over the hoods.
