FWIW, I have used Albas and Choco norms. I don't believe there are three 
hand positions. A friend with a SH had Choco norms and he just went with a 
Noodle and prefers it. He used the Choco for a couple of years. I did not 
like the Choco's and prefer the Billie flipped. Bars are personal, like 
shoes, you gotta try different ones to really know what works for you. I 
have *thought* I found a great bar from a picture...wrong. My 2 cents.

They are definitely more upright than 'staches.  I find that I can get 
suitably aero on the choco's by grabbing the front of the bends and resting 
my forearms on the swept back part (I didn't cut any off), but not really 
meant for that type of use I think.  I was actually looking at other types 
of bars that fit mtb brake levers that allow for a more forward position, 
but not quite like drops; Soma Lauterwasser, Sparrow (upside down) or the 
new Billie bars seem perfect, they're just out of stock, maybe even an 
albatross upside down.  Seems like that is the beauty of quill stems and a 
semi-forward bar - you could adjust the bar height with one of those 
mentioned above to give you a more or less forward position, but still have 
the luxury of upright if you want just by adjusting the height of the stem, 
which doesn't take that long.

I still have a set of SOMA Moustache, too. They theoretically should work like 
any pullback bar with mtb-ish grips, but with a nice forward position as well, 
but they don't. They're terrible.

I've ridden a lot with them.  My fav position is at the corner/curve. 
 There it offers a wrist angle that is very natural and ergonomic. 

At the moment I use Bosco, purely for aesthetic reasons. Not Choco's fault.

Funny, I've been considering the exact same thing for my Sam... It's going to 
be more of a roadish adventure type though, so I'm on the fence as to whether 
I'd like flattish bars.  

All of my bikes have drops; I tried Soma mustache bars a few years ago (and 
still have them) but couldn't really get along with them.  I like being able to 
hunker down in the drops during stiff headwinds or sprints...the 'staches 
seemed to lock me into a mid-aggressive position all the time.

Anywho, long ramble short, I've been curious if the choco bars were the answer.
