Your custom fields are not in the list because they are applied to specific
queues. You either have to limit search by queue or use Jim's trick.

When editing the search, click Advanced, and add

,'__CustomField.{Org}__'

 to the end of the Format

Then save the search with a new name, and use it instead of the original in the 
RT at a Glance
