how do I open com1 @ 2400 8N1 in a terminal ?

I've hooked up a temp sensor, and, would like to check it's outputting data,
sensor continualy outputs data every 1 sec

'stty -F /dev/ttyS0' returns:

speed 2400 baud; line = 0;
-brkint -imaxbel

minicom will do the trick.( Don't run from inside of a screen
session with default key bindings )
You can set up the com port paramters inside of minicom aswell. 
I have used it before with some weather sensors sucessfully.

I would use minicom, which is quite easy to set up as a serial terminal
and you can turn logging on and off.  I used minicom today on my eeepc
at our cattle yards to look at what was happening when our electronic
weighing scales indicated to draft left or right - the dearly beloved
vendors have updated the scales firmware and it no longer emits a single
character "<" or ">" , so it won't drive our automatic drafting :-(

If you have the serial port setup correctly then it should 'come online' 
automagically.
 M tells minicom to reset the 'modem'. 
You may sometimes need to send a  to the serial device to wake up the 
comms.  F

It was more stations than sensors. Mix of davis and lacrosse and an old WMR918.

Not knowing what sensor(s) you are using I can't recommend any thing specific 
to read.

(but I've tested the sensor on another PC with async comm app 'PMComm',
and, it just worked)

that was the 1st thing I've done, set it to 2400 8N1
after that, I've set h/w hs to 'off' [was 'on']

looks like it's an old UART:

another fine option is "cu", which personally i find to be less fuss 
than minicom


cu -l ttyXX -s 2400

gtkterm also seems 'just right' to be if you are in X

its handy as it gives a nice drop down of available serial ttys
(usefullish if you have USB serials you are plugging in and out of)

not sure, it doesn't state (but, at 2400, is handshaking critical?)

suspecting that perhaps the com port might be faulty, I've rebooted the PC
with Knoppix 4 CD, and, Knoppix's minicom (after configuring) reads all 4
sensors correctly (even if still says 'off line')

but, when I reboot with centos (with sensors still plugged in), I get nowhere

as far as I can see, both centos' and knoppix's minicom are set same

.. and you've compared dmesg's and such to see if the serial ports are being
identically detected and registered?

This here is what might be a problem.
This says xen has taken over /dev/ttyS0 ( com1)
What external com port are you trying to use ?
Is it an actual serial port or a USB2serial ?
I had some trouble with some weather gear using a USB2serial.

Xen is server virtualisation software.
If you don't know what it is then fair chance is you aren't using it.
During CentOS bootup grub should give you a choice of a xen kernel and a non 
xen kernel.
If not you will need to install the non xen kernel. ( yum will help you here )

I've already optioned it off in /etc/grub.conf, which seemed to work;
I'll have a look at grub boot choice (so hopefully I'll know next time)

thanks for detailed explanation, much appreciated

as it was, it was 'Xen' that was grabbing COM1 at boot up, disabling it
allowed minicom to have a go at COM1 (even though it still says 'offline')

so, it now works fine,
now I can try to feed the data into mrtg or rrdt,
