If you don't want an employer knowing if you are online, don't add to, or if added, delete from, your contacts. And if you don't want to talk to them, don't pick up the phone. In addition, why do you think Pidgin allows the user to set the state 'invisible'? That's a complicated and hairy topic. However, I can't help but add my one sentence of advice: Telegram has a habit of being a little cinematic and their crypto is apparently questionable.
