I've exactly the same problem. My issue is that I want the "random mix" option I used to have on my SBT. However it is a plugin and not available in safe mode when I run the server on my linkstation NAS. I have run SBS on a Windows XP (Professional) box running headless with RDP for a couple of years, which was okay, but the need to keep virus scanners and security patches up to date was a pain. Also some virus scanners have been known to prevent MySQL from working properly, so you have to choose you security software carefully. I then moved on to a Buffalo NAS running SBS, which was fine for a while, but too slow to be much fun when rescanning the music library or waiting for the WebUI to update. In recent times I moved up to using the Vortexbox distro on a barebones Atom PC that needed only a 1TB HDD and a DVD-ROM drive to make a complete, and cost-effective solution. Of the three methods I've tried the Vortexbox distro has been the least hassle to maintain and the most fun to use. Its low power consumption also means I can leave it running 24x7. I don't have to worry about clashes with virus scanners, either, since Linux doesn't typically need such a thing. To get the current image is quite easy: fetch http://www.radioparadise.com/readtxt.php to get its url. That hardware would be great, but I think you would be better off with VortexBox software on it (its a complete package with linux OS and everything you need all installed at once). Its optimized for running SBS and is free. The Intel Atom D525 Dual Core should be more than enough for a Vortexbox installation. I have run this on a D510 (Shuttle XS35) with good results. The main reason I wanted to use MSB was to use the internet radio services like Deezer and Soma FM as well as some of the applications. You may have seen my other post under Audiophiles about my ongoing garage converion. Currently I'm running Touch in standalone mode but may consider going back to a SFF PC. I take it I won't need a monitor as I'll be able to RDP onto the Squeezebox server, do all my ripping via my laptop. Was looking at this model and swapping the drive to 1TB and windows xp.
