I couldn't find either of those for a reasonable price but saw a Seagate
GoFlex 250GB on Scan and took a flyer.
I can confirm that it works fine.

Can anyone recommend any specfic devices that fall within the above
spec? 250GB would be ample. 
I want to buy one for my Mum who lives 300 miles away, so I just want
it to work.

I agree that running SBS on an external server is generally more
reliable than using the Touch's built-in server (TinySBS). 

However, if you choose to use TinySBS then it is easy to avoid the
hassles of disconnecting, reconnecting, rescanning, etc. There is
absolutely no need to disconnect the USB drive from the Touch to update
your music library. The Touch also runs Samba file server software, so
when the USB drive is attached to the Touch it will also appear as a
drive on your network. You can do all the file management you need on
it from any other computer on the network.

I assume you are asking about a drive working when dirctly attached to
the USB port on the Touch. I cannot help w the drive you mentioned, but
I have used a Toshiba Canvio 1TB drive attached this way. It did work. I
did not have a plugins etc when I used the drive this way. I switched to
running the same drive off my PC on a wi-fi network because updating the
music library is just so much easier that way. If you run it attached to
the USB port you are disconnecting and updating the drive doing a rescan
etc. which is a pain done this way. It does work just better when
attached to a network.

[SlimDevices: Touch] Recommendations for USB drive

Bearing in mind that I'm in the UK (so some drives might not be
available over here) does anyone have any recommendations for a USB
drive?  I'm looking at the Samsung S2 1TB, but being aware from other
posts that the Touch is a bit touchy would there be any particular
problems with this?

Many USB bus powered drives _do_ work with the Touch. Note that they're
all 2.5 drives or smaller. Many people have had good luck with the
Toshiba Canvio external drives. If the hard drive is powered, or if you
run it from a powered USB hub, then just about any drive should work.

I'm not sure about 750 GB or 1 TB 2.5 drives, whether any have been
successfully bus powered by the Touch. These drives have an extra disk
platter which may make them harder to spin up.
