I suspect this issue is caused by the efi-aware grub considering the USB
device (your phone) as a boot disk somehow. Re-assigning.

If I boot in recovery mode, it hangs just after the line Loading
startramdisk... is printed.

Try pressing the escape key when booting and see if any messages that
look relevant appear. Ideally, you should boot by removing quiet and
splash from the kernel command-line.

It would be useful to see your /etc/fstab file if you can attach it too.

What happens if you boot the machine normally, login, and then plug your
phone in? Is it mounted as a USB disk?

Nothing seems to happen when pressing Escape, even when booting with the
quiet and splash flags removed from the kernel command-line.

If I boot normally, login, and plug the phone in, it is mounted as a
media player (I can open and browse its contents in Nautilus).
