You could always look at the ubuntu keyboards from Zareason they have no
windows key which is novel but i have not tried one myself yet.

I've been using a coouple of Lenovo "ThinkPlus Preferred"s (readily
available on Amazon) for that last 18 months or so .They're under £20.00
each, but I've yet to experience a "sticky" key on either of them (unlike
virtually every MS keyboard I've owned, and I've owned most of them). Their
mechanical action can't rival that of the old pre-membrane IBM monsters, and
they have become a little "clattery" (in both a mechanical and aural sense),
but crucially, I can hit any key from any angle without that nagging concern
that it's going to "jam" if I come in from too shallow an angle (Microsoft
Natural Keyboard - go the the back of the class!). The action of each key is
predictable and there's a decent amount of key travle and tactile feedback,
especially by today's standards. Oh, and they come with a detachable
wrist-rest, USB cable and in a nice shade of anti-kitchenware black.

Summary: they become a little clattery with use, but this doesn't affect
their fundamental mechanical action and they are the cheapest
"acceptable-quality" keyboards I've ever used.

okay I've decided to go with one of these two -
http://www.logitech.com/index.cfm/keyboards/keyboard_mice_combos/devices/134&cl=gb,en
 (diNovo non-bluetooth) or
http://www.logitech.com/index.cfm/keyboards/keyboard_mice_combos/devices/3072&cl=gb,en
 (wave).
Apparently the mac one isn't very good, and I'm not in a position to be
sending it back if I could just pick another one :)

Personally I don't really care much about keyboard quality - I type
ridiculously fast but seem to manage to do it on whatever keyboard I'm
using (well, unless it's got broken keys in which case I get VERY
annoyed indeed!)

What is quite useful is a wireless keyboard. Got some Logitech one
that is invaluable if giving presentations etc. where the laptop needs
to be close to a projector and I'm in front.

I'm currently using a Saitek Eclipse II which is backlit so ideal if
you're into gaming. The media buttons also work out of the box in Ubuntu
and I find it pretty good for typing, but as others have said that's
largely a matter of personal preference.

Was gonna suggest a G15 as well, but wasn't sure about the compatibility. I've
got a G15 (got it last week, in fact!) and it's great. The keys do take a bit
of getting used to, though, because of the 'G' keys on the left, where they're
around the Ctrl, shift, caps and tab keys (look at the pics of it on Logitechs
website).

Great keyboard. Logitech are generally good anyway, I've got a gaming mouse by
them as well (G5) - good stuff

Keyboard preferences vary dramatically from person to person so
recommendations aren't much use. I think keyboards are something where
it can be worth paying more to get one from a shop so you get to try
it out first (you can order them and send them back if you don't like
them but it only takes a couple of iterations of that for the
shipping charges to be more than the premium taken by an actual shop).
My preference is for the keyboards in thinkpads, but I haven't found a
desktop version of this yet.

Any keyboard should work for the basic functionality since the
interfaces are standardised. There can be issues with the extra
shortcut buttons as the code they send seems to be chosen at random by
manufacturers, but you can map them to what they are supposed to do
manually.

Why has nobody made a keyboard as good? That has long baffled me. My
one has distorted in the heat of my conservatory and has been
relegated to the computer in the shed.

I like the new apple keyboards. Does anybody know if they work with
