Sounds about right. I believe assuring GRUB2 installed with LVM 
support is not that difficult, but GRUB2's LVM support is very 
limited, I believe only simple volume or simple mirroring. 
Apparently installer developer want to make sure the installer 
does not produce an unbootable system.


IMHO, installer should have an "expert" mode where questionable 
stuff won't stop installation, even when it potentially cause 
unbootable system (we can just try again). This especially true 
for kickstart installation.

it did not set the /boot partition to be LVM but it let me use 
the pull down to switch it over to LVM for /boot.


Great! Thank you for doing the experiment! I was asking because 
I tried that and failed, but the issue turned out to be 
UEFI/Legacy issue. I will try that next install.

Some Fedora installers allow it, others don't. Last time I checked,
maybe two releases ago, it was not allowed mainly because it's more
complicated making sure the bootloader always has LVM support. While
GRUB2 does have LVM support, it won't work for some kinds of LVM raid,
and also extlinux doesn't support it.

Yes, it's possible.

Simple during the install process, remove /boot "not LVM" partition and
the /boot/* will recide into / (root) LVM partition.

I have not used LVM for any of my personal systems and it has been
years since I worked as a sysadmin on anything with LVM, but since you
have not gotten a reply yet I just checked out some of the VirtualBox
tests that I created using the Fedora 26 netinstall cd images. It looks
like I have one that does include /boot living on LVM.

I also fired up that virtual machine with the netinstall boot cd and
checked out what it would do on a default install and it did not set
the /boot partition to be LVM but it let me use the pull down to switch
it over to LVM for /boot.

Maybe others with more direct LVM experience can add any important
caveats.

Is it possible to install Fedora - either with GUI or Kickstart 
- with /boot in LVM? I know there are hack to move /boot to LVM 
after installation, but after seeing how smoothly Ubuntu 
installer doing that kind of installation, I am wondering 
whether this can be done in Fedora installation?
