Hello,
2 things I thought of.  1) Delete off find my iPhone.  2) The guy 
can't really reset it in the store through settings, he'll need 
the apple ID password, he could possibly do it in iTunes, though.

lock bag device.  Or even go on there and see if it still signed 
into your stuff.  And if you have the store managers Number you 
might want to think about giving him a call, and asking him to 
reset the device so that your notes are no longer on their 
otherwise you have no other options  besides the one I mentioned 
above.

I hope this is a lesson learned for you, in any case, storing your credit card 
openly in an unprotected and unencrypted note is just asking for trouble. If 
you have to have it written down somewhere at least use a mostly secure way to 
do so by putting it into a password manager, most of them also have so-called 
"SafeNotes" or whatever the particular application calls them. I use Roboform 
and in particular the Roboform Everywhere service. All my passwords are 
encrypted and stored on their server and the same goes for the SafeNotes. I can 
access them with the Roboform application on all my computers where I have to 
enter a Master Password to unlock these notes. The Roboform iPhone app is very 
accessible and you can protect it with its own PIN or use Touch Id to unlock 
it. This way nobody can see my passwords and sensitive information I store in 
SafeNotes even if they were to get a hold of my phone when it was  unlocked.

As far as I know this erases all contents, sets the phone back to factory 
default and it's basically like when you get a new phone where it's at the 
"Swipe to set up" screen with all the languages

Not only by third-party sources, but Apple themselves have posted about this 
and the new bluelight reduction feature which is supposed to make it easier to 
go to sleep after using your phone at night for sighted people (and, I assume, 
visually impaired)

I think if you had find my iPhone enabled,you could remotely wipe it from 
there. You're also going to want to disassociate that phone from your Apple ID. 
Here's an article that might help; selling your iPhone has become more 
complicated these days than just wiping it.

Hello, your shit out of luck in less you want to go to iCloud and lock bag 
device. Or even go on there and see if it still signed into your stuff. And if 
you have the store managers Number you might want to think about giving him a 
call, and asking him to reset the device so that your notes are no longer on 
their otherwise you have no other options  besides the one I mentioned above.
