Hi all
Reboot your iPod Touch holding the top (power) and home buttons BUT
release the top button 10 seconds into it (right after the screen goes
dark) and continue to hold the home button until iTunes detects the
phone in recovery mode. The iPhone screen will appear to be off, but
start iTunes if not started yet.

You will probably find you need to do this:
If an iPhone or iPod touch is not recognised in iTunes on a Mac, the Apple
Mobile Device Service may need to be removed and reinstalled.
If the issue continues after using the troubleshooting assistant, follow
these steps to remove and reinstall the Apple Mobile Device Service on Mac OS
X. Note that you'll need authenticate with an administrator account and
password to complete these steps.
1. In the Finder, locate iTunes in the Applications folder and drag it
to the Trash.
2. Move the iTunes icon to the Trash
3. Choose Go Go to Folder.
4. Enter /System/Library/Extensions and click Go.
5. Locate the file AppleMobileDevice.kext and drag it to the Trash.
6. Choose Go Go to Folder.
7. Enter /Library/Receipts/ and click Go.
8. Locate the file AppleMobileDeviceSupport.pkg and drag it to the
Trash. If prompted, authenticate with the admin password.
9. Choose Finder Empty Trash and restart the computer.
10. Download and install the current version of iTunes:

My 8gb iPod Touch does not appear in iTunes nor does it show up on the
desktop but does show in System Profiler as being connected to a usb 2.0
port and does recharge.
I have tried removing all other usb devices; connecting to each of the usb
ports; turning iPod off and on again; restarting computer and reconnecting
iPod; and repairing permissions and then going through all the previous
steps. Deleted every iTunes and iPod plist I could find.
