I know what I want to acheive with the configuration, but with all this
being new to me I'm having real problems translating it into actual security
settings. Basically I only want a handful of people to send e-mail from this
server (I thought I had set up a specific list for the Windows security
packagae to authenticate but that's also stopped working), but anybody can
send mail to those addresses. The Inbox is then checked remotely using the
POP3 service I've got (that bit works fine)

Have you tried it unchecking "Allow all computers which successfully
authenticate to relay..." with the approved list?

Tis I again with ongoing problems...

especially now that refining the security settings on
the server to keep unauthorised access out has now stopped me from receiving
mail.

Every time I send an e-mail to the new address it keeps getting bounced back
with the following message:

Connected to [server's IP] but sender was rejected.
Remote host said: 505 5.7.3 Client was not authenticated

A secondary problem to this is that as soon as I restrict e-mail replaying
in any way I then cannot send any e-mails either, but without relay
restrictions I'm getting shafted by the spammers.

Somebody spare me the madness!

I got a nice lil shareware POP3 server and it works well. I'm having a few
teething issues now trying to actually send e-mail to my new address
(reporting back that the server denied connection because teh user wasn't
authenticated) but I'll work through that.

I'll be back if I get stumped again ;)

Ah yes, that little problem. MS calls the answer Exchange. 

I think, since I've never done this part of it this is a guess (probably an
uninformed one at that), that adding them as an administrator lets them see
the jumble of messages. But I doubt that's what you want. So yes, I think
3rd party or roll your own.

This is the fun part. Let us know?

I've set up and configured the SMTP service and created a Virtual SMTP
server assigned to the IP I want but what now? I don't know if it's
configured correctly and securely or how now to set up access to it so I can
actually use the darned thing.
