 Roasted Mushrooms With Asparagus
Serves 4
 
1 Pound Baby Portablello Mushrooms, Washed, Dried And
Sliced Thickly
1 Pound Asparagus
2 Garlic Cloves, Chopped
1/2 Cup Olive Oil
Salt  Pepper
1 Teaspoon Chopped Fresh Rosemary
1 Teaspoon Chopped Fresh Thyme
1/4 Cup Chopped Fresh Parsley
1 Teaspoon Balsamic Vinegar
 
 
Preheat the oven to 375 degrees F. Remove the woody
stems off of the asparagus spears, and cut them into 2
inch pieces. Mix the olive oil with the garlic, herbs
and seasonings in an ovenproof casserole dish large
enough to fit all of the mushrooms and asparagus
pieces. Add the mushrooms to the dish, and mix well,
coating the mushrooms with the flavored oil. Bake for
about 10 minutes, and then add the asparagus pieces.
Stir to mix and continue baking another 20 to 25
minutes or until cooked through. Remove from the heat,
and drizzle with the balsamic vinegar. Serve.

Hi Jude, this one is easy and tasty can be adjusted, add chicken, turkey, etc for one dish meal.And is not expensive. 
SPINACH RICE CASSEROLE

2 pkg(10 oz) frozen, chopped spinach, thawed, and squeezed dry
3 large eggs
½ cup milk
2 T butter, melted
½ cup onion, finely minced
2 T parsley, minced
1 tsp dried thyme
Dash of nutmeg
1 tsp salt
¼ tsp Worcestershire sauce3 cups cooked long grained rice (white or brown)
3 cups grated cheddar cheese

Preheat over to 350
In a large bowl, whisk the eggs until blended. Add milk, butter, onion, parsley, thyme, nutmeg, salt and Worcestershire sauce and mix well. Fold in 2 cups of cheese, rice and spinach. Turn mixture into a 4 quart casserole or baking dish that has been lightly coated with oil.
Bake, uncovered, until bubbly, about 45 minutes. Sprinkle remained cupof cheese over top, and bake, uncovered until cheese melt, about 5 minutes
Serves 8 More after the holiday!
