When your iPhone detects you connect to a speaker, VoiceOver will remain routing from your phone speaker. I believe you can change if the device is detected as speakers or headphones somewhere, probably in its More Options menu.

I haven't used iOS in a very long time indeed. However, what happens if you go to controll center, near the music options? I think there you should find something that says something to the effect of audio routing, and you'll see your speakers

Yeah, I found that out the harder way when I recorded something without headphones and VoiceOver had a chorus effect on it. I was wondering why that was.

system audio is also captured including voiceover audio, so if you want to capture vo audio for tutorials, you're in the right place.Also if you want to capture your audio via your mac you can use quicktime in conjunction with the midi audio setup utility

I thought that only captured your screen and mic, not system audio. But I could be wrong.

Yess You can use the apple native screen recorder. Go to settings. Then controol senter. Then customize controles. Then add screen recorder to your controlcenter. Then open controlcenter and longpress the screen recorder icon. Then turn on the mic option

I'm not sure what you mean. If you'd like to hear your iOS sound in headphones connected to your PC, you could try Reflector screen recorder.
